September marks the beginning of National Chicken Month! No, I didn’t know this either, but with the weather changing and school in session, chicken is a frequent flyer on our menu.

If you brine or marinate your chicken before cooking, you will infuse flavor into the meat by the process of osmosis. Also, make sure to season before cooking.
Make sure to use a meat thermometer to check if your chicken is done. This prevents you from eating under-done chicken as well as overcooked chicken which can be dry. Brining or marinating also helps keep the chicken moist. Chicken must come to an internal temperature of 165º to be safe to eat.
You can use almost any cooking technique when making chicken. It can be grilled, baked or roasted, pan-fried, deep-fried, poached, or made in a slow cooker, instant pot, or air fryer.
