This refreshing Caprese Salad Recipe is one a dear friend has brought to our 4th of July party the last couple of years. I think I could live off it; it’s just that tasty!

  • Kitchen Staples – Extra Virgin Olive Oil, Salt, Freshly Ground Black Pepper
  • Good quality Aged Balsamic Vinegar – I use an 18-year balsamic, that’s sweet and syrupy. The better the quality, the tastier your salad will be.
  • Fresh Blueberries – Rinse and dry before using.
  • Fresh Cherry or Grape Tomatoes – Sliced in half to make them easier to eat.
  • Mini Mozzarella Balls – Drained. I used round balls, but Ciliegine (oval-shaped) balls are another fun option. Slice in half if desired, especially if serving young children to minimize the choking hazard.

Recipe Tips

  • You may prep all the ingredients (except for chopping the basil) ahead of time. It’s best to combine and toss with the dressing right before serving.
  • PRO-Tip: Tear or chop the fresh basil right before tossing so it doesn’t get too soggy and discolored, though it will still be tasty if it does. We’re happy to eat the leftovers (if there are any) the next day.
  • If you don’t have access to mini mozzarella balls, you can purchase a larger ball of fresh mozzarella and cut it into cubes.
  • PRO-Tip: Slice the mozzarella balls in half if desired, especially if serving to young children to minimize the choking hazard.
  • You can also make this with full-sized garden or farmers’ market tomatoes. Just chop into bite-sized pieces, and let the excess juices drain onto paper toweling or into the sink in a colander before adding to the salad.

A tasty summer twist on the classic Caprese Salad with the addition of fresh blueberries.

Ingredients

Salad Dressing:

  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons aged Balsamic Vinegar
  • Salt and freshly ground black pepper, to taste.

Salad:

  • 1-2 cups fresh blueberries
  • 1 pint cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella balls, drained and cut in half if desired
  • ¼ cup fresh basil leaves, torn (or chopped)

Instructions

  1. Make the salad dressing by whisking the olive oil into the balsamic vinegar. Season with salt and pepper to taste.
  2. Add the tomatoes, Mozzarella balls, and blueberries to a salad bowl.
  3. Right before serving, mix in the basil.
  4. Toss with the salad dressing and serve.

Notes

If you don't have access to mini balls of fresh mozzarella, use a large ball and cut into bite-sized cubes.

This salad is best eaten shortly after tossing the salad with the dressing.
