Memorial Day’s dinner just has to be grilled. It’s the holiday which ushers in our summer, and though we grill almost every weekend after the snow has melted, firing up the charcoal grill is must on Memorial Day, the 4th of July, and Labor Day.
A friend made these simple grilled chicken lettuce wraps for a party before the Prom. She used pork tenderloins and they were irresistible. I was thrilled to hear how easy they were to prepare…perfect for a family dinner. Since we just had pork chops the night before, I made these with chicken…and they were a hit with the family.
Grilled Lettuce Wraps…recipe adapted from my friend, Sue Welch
8 boneless skinless chicken breasts
1 cup Soy Vay Veri Veri Teriyaki (or your favorite homemade teriyaki sauce)
Bib lettuce, washed, dried and separated into leaves
English cucumber, sliced thinly
Red bell pepper, sliced
Sliced mushrooms, seasoned and sautéed in olive oil
Marinate chicken in teriyaki at least an hour and up to overnight. Grill, cool and shred.
Set out bowls of all the ingredients. Fill each lettuce leaf with shredded chicken and add desired ingredients. Top with peanut sauce.
