Turkey Sliders with Roasted Tomatoes

By now, I think you all know how much I love to make desserts…the more decadent, the better. But I also have a penchant for creating yummy appetizers. I’ve hosted my book club about 15 times…and besides a buffet of sweet nibbles, I love to add savory appetizers to the mix…and I have a slew of recipes in my collection. When our Sunday Supper theme for this week was announced, it was no surprise my thoughts went straight to desserts. If I were to host a Super Bowl party, brownies and cookies would definitely be on the menu. But with Valentine’s Day approaching, there’s been a lot of chocolate melting and cocoa dust in my kitchen. It was time for something savory.

I have some dear, on-line foodie friends. We share recipes on a number of websites…and a few have their own blogs. It was one of these friends who shared these mini-turkey burgers. Linda also was the genius who added roasted plum tomatoes to the mix…perfect for the mid-winter when the tomato selection is pitiful. We actually ate these for dinner, but they’d be perfect for a Super Bowl buffet…cook them up right before half time…and your guests will be thrilled. Turkey Sliders with Roasted Tomatoes….#SundaySupper, #SuperBowl

Ingredients

  • Adapted from Martha Stewart and Ina Garten
  • 2 slices white sandwich bread, pulsed in food processor to make bread crumbs
  • 1 pound ground turkey (dark meat)
  • 1/2 cup grated sharp cheddar cheese
  • 2 tablespoons grated onion
  • 1 teaspoon kosher salt
  • Freshly ground pepper
  • 1 tablespoon olive oil
  • 12 party-size rolls
  • For tomatoes:
  • 6 plum tomatoes, halved lengthwise, cores and seeds removed
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1 large garlic clove, minced
  • 1 teaspoon sugar
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper

Instructions

  1. Mix turkey, bread crumbs cheese,onion, salt and pepper. Mix just till combined. Form about 12 patties, about 2-inches in diameter.
  2. In a skillet, heat oil over medium heat. Cook patties until browned and cooked through. Serve on rolls with lettuce, roasted tomatoes and condiments of your choice.
  3. To make tomatoes:
  4. Preheat the oven to 450º.
  5. Arrange the tomatoes on a sheet pan, cut sides up.. Drizzle with olive oil and balsamic vinegar. Sprinkle tomatoes with the garlic, sugar, salt, and pepper. Roast for 25 to 30 minutes, until the tomatoes soften and start to caramelize. Serve warm or at room temperature on your sliders

Thank you, Liz! My husband hails from Southern New Jersey – the Garden State. So, he loves his tomatoes. And when he’s not on a vegetarian streak, he loves his turkey burgers.

I need to make some of these asap Liz! They´re the perfect bite with roasted tomatoes, and a good change from beef. Isn´t roasting the best thing to ever happen to vegetables? And I would have them for dinner too!

Here in Brazil we have also created several recipes for eating watching the football games. This sandwiches are divine and tempting. We love turkey here at home and of course I will take the recipe however I have adapted to the types of ingredients we found more easily here in Brazil. a good weekend

Liz, your recipe for Turkey Sliders with Roasted Tomatoes is perfect party food as well as great finger food for the kids – what a nice idea to add roasted plum tomatoes to the burgers. I have been using ground turkey a lot lately and am constantly on the look-out for some fuss free family fare. This recipe will definitely make a wonderful addition to my list of recipes to try during our up-coming spring holidays.

What a great idea! Who doesn’t love a slider? And I don’t often see ones made from turkey. These must have great flavor, and certainly look healthier than regular sliders. Good stuff – thanks.

I only use ground turkey unless my husband begs me to make lasagna. We both agree that it tastes better with beef. I love that you roasted the tomatoes!!! Oh how sweet they must be!!

I’m doing hamburgers tonight with grain-free bread and I think I will do that with the tomatoes just to make them a little different from usual.
