Southwestern Chicken Stuffed Avocados
These super easy Southwestern Chicken Stuffed Avocados are a delicious low carb meal, but fabulous for anyone who loves avocados and Tex-Mex cuisine. Always plentiful at our house, avocados are one of my favorite ingredients to add to salads, sandwiches, and dips. But used as a vessel for chicken salad was novel and absolutely irresistible.
Southwestern Chicken Stuffed Avocados
Life is a little chaotic at Chez Skinny Chick right now. Our kitchen has been completely gutted and hammering noises are a constant.
Plastic visqueen is “supposed to” keep the dust at bay, but I have plenty of evidence to contradict that! Thank goodness for easy, no oven needed dishes like these Southwestern chicken stuffed avocados!
I do have a little confession, plus an apology to offer my friend Carolyn, who is the cookbook author who shared her terrific new cookbook and recipes with me. In a whirlwind weekend of packing up our kitchen, this cookbook which I planned to place in a very secure spot, disappeared. I’m certain it has joined all the other odds and ends in a random cardboard box in our basement. Sigh.

Easy Keto Dinner or Lunch
Thank goodness, I had made this fabulous stuffed avocado recipe before misplacing the cookbook, as well as for a kind blogger friend who sent me a photo of the recipe so you wouldn’t miss out!
Fabulous for a comforting dinner, I ate a half an avocado for four lunches in a row. Filling and utterly delicious, it was a wonderful change of pace from my usual fare. P.S. I found the cookbook on a shelf in our overflow pantry. Whew.

Southwestern Chicken Stuffed Avocados
Delicious, low-carb stuffed avocado with Southwest twist!
Ingredients
- 2 medium avocados
- 2 tablespoons fresh lime juice, divided
- Salt and pepper
- 2 cups chopped rotisserie chicken
- 1/4 cup mayonnaise
- 1 tablespoon chopped fresh cilantro
- 1/4 teaspoon chipotle powder
- 1/2 cup diced tomatoes
- 2 tablespoons shredded cheddar cheese, optional
Instructions
Cut the avocados in half and remove the pits. Using a spoon, scoop out some of the flesh, leaving a 1/2-inch-thick wall inside the skin. Brush each avocado half with the lime juice and sprinkle lightly with salt and pepper.
In a medium bowl, mix together the chicken, mayonnaise, remaining lime juice, cilantro, and chipotle powder until well combined. Season with salt and pepper to taste. Gently fold in the diced tomatoes.
Divide the chicken salad among the avocado halves and sprinkle with cheddar cheese, if desired.

One of our favorite treats is fat head pizza we only have it about once a month but it’s so good.
I could honestly eat these every day for breakfast, lunch and/or dinner. I love everything about them!
This is going to be a pleasant change from my Avocado and Egg Toast. Avocado prices fluctuate from one extreme to the other but I won’t let that stop me from making this. Happy Mother’s Day!

What a delicious meal all in one – I love it! Plus it’s so healthy. I much prefer quick meals like this especially when the heat and humidity are soaring outdoors. Great recipe and easy enough to toss together for lunch or for a quick no fuss dinner.

Oh, I haven’t made any stuffed avocados for a long while, so thank you for this beautiful reminder. Stuffed avocados are such a delicious and elegant dish, and this combo of chicken and cilantro is spot on.

Low carbs, lean protein and healthy fat…this is exactly what I love for my dinner :-))
The infamous dust! We lived in it for nearly 6 months during our renovation, everything was gritty. I swear, I felt like I was eating the stuff at times! One day, about halfway through the ordeal, it was so thick in the dining room that I wrote “DUST” on the hardwood floor with my finger. The contactor took it as a hint and had his cleaning crew come by. That was the only nice thing he did for us.
The wierd thing about construction dust is that it settles into unassuming spots and slowly releases over time. Make sure you have a good cleaning service for 6-8 months afterward, otherwise it’ll make you crazy!
Although I could never go totally keto (I like wine too much), I too have been consuming less carbs. This dish looks scrumptious and filling. Avocado is one of my all time favourites, it’s particularly good with the southwest flavours. I’ve made a similar but retro dish stuffed with salad shrimp, I cannot wait to try this tasty version. I love avocados! But they are very expensive over here. I would love to try stuffing them with chicken! Sounds really delish.
