Hawaiian Sunset Cocktail
Multi-platinum singer-songwriter, Kenny Chesney, is coming to my hometown of Indianapolis as part of The Big Revival Tour. His Blue Chair Bay Rum has been named the official sponsor of No Shoes Nation. So I figured I’d whip up a tropical cocktail with this new rum line that was inspired by Kenny’s island lifestyle.
I’m a big fan of pineapple and rum drinks and adding some pureed strawberries wasn’t a stretch for my sensibilities. The strawberries have been fragrant and flavorful and the puree aroma was pure bliss. So it was no surprise that adding pineapple juice and a splash of rum would make this Hawaiian Sunset Cocktail beach-worthy beverage.
Blue Chair Bay Rum
From the shores of the Caribbean, came the four flavors of Blue Chair Rum—white, coconut, coconut spiced, and banana. I selected the white rum for this Hawaiian Sunrise but would love to swap it out to create a coconut version of this beach-ready drink. Doesn’t that sound terrific?

Hawaiian Sunset Cocktail
A delectable tropical cocktail with rum, strawberry puree and pineapple juice.
Ingredients
- 2 ounces Rum (try coconut if you dare)
- 1/2 cup pineapple juice, fresh and chilled
- 10 ounces strawberries, leaves removed, then pureed and strained to remove seeds
- 2 tablespoons extra-fine sugar
Instructions
- Add up to 2 tablespoons of sugar to pureed strawberries to sweeten to taste. Mix all ingredients. Garnish with strawberries, pineapple slices or both. Serve.
Notes
Additional time needed to puree and strain the strawberries.

I’ve used coconut rum and I must say it makes for a good, simple drink. Just add some pineapple juice and one has a simple pina colada. I was pleasantly surprised!

Liz, I would have to say that after being in the Caribbean and actually SEEING Kenny Chesney’s little ‘shack’ on St. John (it was IMMENSELY HUGE!!!!!! and well tucked away behind the trees) . . . I would have to use his rum in a PainKiller! Had them recommended by a fellow AHS classmate to indulge in while in the Virgin Islands and I must admit, they do the job well! A ‘Painkiller” would be my cocktail of choice! Thanks for another great tropical recipe!
