Chopped Italian Sub Salad
If you love Italian Sub Sandwiches, this Chopped Italian Sub Salad is perfect for your lunches or a lighter dinner. As a bonus, there’s no cooking involved!
This Chopped Salad Recipe takes all the ingredients you love in a submarine sandwich and transforms them into a satisfying low-carb meal.
Why You Must Make
- This delicious entree salad is from my friend, fellow blogger, and cookbook author, Alyssa Brantley, of Everyday Maven. Check out her latest cookbook: The “I Don’t Want to Cook Book”: Dinners Done in One Pot (amazon affiliate link).
- This Italian chopped salad is a terrific entree to make for lunch with your girlfriends.
- It’s a low-carb salad that’s packed with flavor.
Ingredient Notes
- Kitchen Staples – Kosher Salt, Ground Black Pepper, Red Wine Vinegar
- Avocado Oil – Extra Virgin Olive Oil can be substituted.
- Sliced Provolone Cheese – Cut into 1-inch cubes.
- Sliced Ham – Cut into 1-inch cubes.
- Sliced Genoa Salami – Cut into 1-inch cubes.
- Sliced Pepperoni – Cut into 1-inch cubes.
- Grape Tomatoes – Slice lengthwise. You may also use sliced or halved cherry tomatoes.
- Sweet Onion – Use half, peel, then cut into thin slices (I used a yellow onion).
- Shredded Iceberg Lettuce – Look for an 8-ounce bag in the produce aisle or shred your own from a head of iceberg lettuce.
Recipe Tips
- For some extra pizzazz, top this chopped Italian salad with some chopped mild or hot cherry peppers.
- If you’re not on a low-carb diet, make some croutons by sauteing bread cubes (from a baguette or another loaf of bread) in a mixture of salted butter and olive oil. Sprinkle a few homemade croutons over each serving for a delicious crunch.
- If you’d like less intense onion flavor, soak your chopped onions in ice water to remove some of the bite. Drain on a cloth or paper towel before using.
- To avoid soggy lettuce, don’t add the dressing until you’re ready to serve the salad.
How to Make
Frequently Asked Questions
A chopped salad is a type of salad where all the ingredients are chopped into bite-sized pieces. A chopped salad can contain vegetables, fruit, cheese, meat, nuts, and more. No knife is needed.
You can arrange the salad ingredients on a platter or in a bowl. Toss or drizzle with dressing right before serving.
All the ingredients in this salad are classic components of an Italian Sub (submarine) Sandwich. But you can easily adapt this salad to your palate by using your favorite types of cheese and/or deli meats.

Great recipe. One note: the salami is mentioned in the body of the post but is missing from the recipe ingredients at the bottom.
Thanks for catching that, Josh. I’ve edited the recipe and FYI, it’s 2 ounces sliced Genoa salami.

This looks SO GOOD!!
My fave easy weeknight dinner is a chicken tender buffalo wrap!
Chopped Italian sub bowl is delicious and refreshing I am going to try it again.
For my quick meal I keep thick cut bacon that I have cooked in the oven in the freezer. I saute onion and mushrooms in butter. Turn the heat on low and make what i call stirred eggs with cheese. As the eggs cook I keep moving them just enough to cook through making sure some of the white and yolk are visible. I add in the bacon mushrooms and onions as it cooks.
My favorite is simple roast chicken parts. So simple and hands-off!
Would love a chance for the cookbook. I like to do a sheet pan of shrimp , roughly sliced cabbage, julienne carrots and thinly sliced baby potatoes , drizzled with olive oil, garlic, fresh herbs
