When strawberry season arrives, I immediately start dreaming of strawberry shortcakes topped with dollops of sweetened whipped cream. But don’t limit yourself to desserts as this Berry and Brie Salad is a delightful summer side dish!
Basil, Brie and Strawberry Salad
Gorgeous, ripe strawberries are typically featured in my fruit salads, but I wanted to share a salad that was more substantial, even suitable for a light lunch. This meant a protein source was in order. And what better than Brie? The tiny cubes add a creamy contrast to the berries and celery without blowing the diet.
Just like whipped cream is the perfect pairing with strawberries in the classic shortcake, this luscious brie is an ideal match for these berries bathed in vinaigrette. Every bite of this basil, brie and strawberry salad was a delight to the palate.

Tips for Making a Berry Brie Salad
Pick the freshest, fragrant strawberries for this salad. Save this recipe for when you can purchase seasonal berries.
Slicing soft cheeses can be a pain. Place your Brie in the freezer for about 30 minutes to allow it to become firm. Remove the rind and cut into cubes.
Dijon mustard (0r any mustard) will help emulsify your salad dressing. This means it will thicken and is less likely to separate.
To make sure your salad dressing emulsifies, it’s important to slowly drizzle in the olive oil while whisking constantly.

- 2-3 ounces brie, rind removed and cut into cubes
- 16 ounces, Florida strawberries, hulled and sliced
- 2 tablespoons minced celery
- 3 tablespoons balsamic vinegar
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- A pinch of freshly ground black pepper
- 1/2 cup extra virgin olive oil
- Butter or bib lettuce
- 2 teaspoons minced fresh basil
- Combine strawberries and celery in a bowl. Set aside.
- Make vinaigrette by whisking together vinegar, mustard, salt and pepper. Continue whisking while slowly drizzling in olive oil.
- Arrange lettuce on individual serving plates or platter. Toss berry mixture with vinaigrette (start with 3 tablespoons). Sprinkle with brie cubes and basil.
Reserve leftover balsamic vinaigrette for other salads.
Olive oil will congeal if left in the fridge for long periods, so make salad within a few hours of serving. Bring leftover salad dressing to room temperature before using.
Brie can be difficult to cut. You may want to spray your knife with a non-stick cooking spray or just pull off tiny pieces to add to your salad.
