Strawberry Cheesecake Parfaits…#SundaySupper

My first clue that this recipe was a success was seeing that Bill had finished his off for breakfast…well, it does have fruit and dairy. Practically like a strawberry yogurt<insert sarcastic tone>, right???!  Well, I must admit, they were very generous servings…so the leftover parfait was ever so tempting when he opened the fridge at 5:00 AM. Who has willpower at that hour???

Luscious, sweet and fragrant strawberries are one of my favorite tastes of spring. We anxiously await the local berries to appear at our produce stand the first week of June…then the best of the best strawberry recipes are pulled from my files…strawberry pie dessert, strawberry shortcakes and even my favorite spinach salad topped with sliced ripe berries. So when the Sunday Supper crew decided on the “Spring” theme this week, I knew a strawberry dessert was in order.

Making parfaits is painfully simple…there are no rules, just alternate layers of the whipped filling, red currant jelly and sweetened chopped strawberries. I made two large parfaits, but this recipe could easily serve 4. There is a bit of a learning curve on how to make clean pretty layers, and I’m not quite there yet. A damp paper towel is helpful in wiping any splatters from the inside of your container, but (at least in my family) when a dessert is so incredibly decadent and delicious, a more rustic presentation is just fine!

Strawberry Cheesecake Parfaits…#SundaySupper

Ingredients

  • 4 ounces cream cheese, at room temperature
  • 1/2 cup sugar
  • Juice of half a lemon
  • 1 cup heavy cream, whipped
  • Approximately 1/3 cup red currant jelly
  • 8-12 ounces fresh strawberries, chopped and sweetened to taste with sugar (I used 2 tablespoons)
  • 2-4 whole strawberries for garnish

Instructions

  1. Mix cream cheese, 1/2 cup sugar and lemon juice, till creamy. Mix in the well whipped cream. Set aside.
  2. Gently melt the jelly in the microwave and pass through a sieve if needed for a smooth consistency. Cool slightly.
  3. Use 2-4 glasses, depending on size of dessert you desire, and start layering the ingredients starting with the cream, then the jelly, then the strawberries. Repeat and end with a layer of cream and garnish with a whole berry (mine were huge so I cut in half).
  4. Total Time:30 minutes
  5. Yield: 2-4 servings

Anything made by Liz Berg and containing whipped cream and strawberries would call my name from the fridge at 5 a.m. too =) Tantalizing photos and undoubtedly tasty!

Great minds must think alike, Liz, because I made something very similar the other day. I was lusting after strawberries but they weren’t very sweet yet so I mixed them (very, very rustic) with sweetened cream cheese and lemon and tossed in a crumbled cookie. It was good but will be so much better in a couple of weeks when the berry selection improves.

Parfaits are great – so much fun to play with. They used to be huge when I was a kid (often a company dessert), then seemed to fall out of favor for awhile, but now they quite popular again. Yours looks wonderful! I’d certainly love to have it for breakfast. ;-) Good stuff – thanks.

I probably look forward to spring more because of strawberries. I refuse to buy them during the winter and if when I smell them in the shop they don’t have a strong smell I don’t bother. So come spring time when they are in season I do tend to go a bit crazy and buy them almost every week. I know this household would have no will power with those around.

Love, love, love! Lizzy, these parfaits are perfect for spring. Strawberries and cream is such a classic, warm weather dessert. I would’ve eaten these at 5 a.m. too, or any time of day really. They would’ve been too hard to resist.

These not only are stunning, but look delicious, and are super easy to make. I have a question though, how much in advance can you make these ? Can you prepare everything the day befire and put togetherthe next day ? Will they hold for a day fully made ? TIA,

Thanks, Etti. The only thing that doesn’t hold well is the chopped strawberries…they will soften and change texture after about 24 hours (they won’t be bad, just not the same as fresh). These will still taste yummy the next day, but they will be best on the day you put them together. They can be prepared early in the day for dessert that night without any trouble…and the cream cheese mixture can definitely be mixed up the day before. Hope that helps!
