Chocolate Raspberry Crumb Bars
I’m hosting my book club this week and it was the perfect opportunity to test out new recipes. Of course, my friend, Danielle, has tons of sweet inspiration on her blog, Hugs & Cookies XOXO, so I started my search there.
Her Chocolate Raspberry Crumb Bars looked divine! I could easily make them a few days ahead and they’d be an amazing addition to my buffet of goodies.
The cookie crust, topped with fudge, dollops of raspberry jam, crumbs, and chocolate chips, created an exquisite bar cookie with marvelous textures and flavors.
A Cutting Challenge
These were a bit more challenging to cut into perfect squares than the typical bars with the heavy sprinkling of chocolate chips AND the crumbly topping, but the hubby was happy to sample the chips that flew off the cutting board. I
usually chill my brownies and bar cookies to get a clean square pieces, but cold chocolate chips do not cut easily! No matter how you slice ’em, I think you’ll fall head over heels for these scrumptious chocolate raspberry crumb bars.

Chocolate Raspberry Crumb Bars
Shortbread, fudge, jam and a layer of crumbs makes for an out of this world bar cookie!
Ingredients
- 2 sticks unsalted butter, softened
- 1/2 cup brown sugar, packed
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 cup bittersweet chocolate chips
- 1 cup semi-sweet chocolate chips
- 1 14-oz can sweetened condensed milk
- 1/2 cup chopped pecans
- 1/2 cup raspberry preserves
Instructions
- Preheat oven to 350º. Line 9X13 pan with nonstick foil.
- Cream butter and sugar together.
- Mix in flour and salt until crumbly.
- Press 1 3/4 cups crumb mixture onto bottom of baking dish and bake for 10-12 minutes or until golden brown.
- Stir nuts into leftover crumb mixture. Set aside.
- Combine sweetened condensed milk and bittersweet chips in a microwave safe bowl and heat for 30 second intervals in microwave until chips are melted. Stir until smooth.
- Pour over hot crust and spread evenly over top with offset spatula.
- Sprinkle reserved crumb mixture over chocolate mixture. Drop teaspoonfuls of preserves on top of crumb mixture, then sprinkle with 1 cup semi-sweet chocolate chips.
- Bake for an additional 25-30 minutes or until set.
- Cool and cut into bars.
