Peach Clafouti~

I don’t think I’d even heard of a clafoutis till this year…it’s a rustic French dessert that can be thrown together in minutes….basically fruit covered with a crepe batter which forms a custardy delight. You can use any stone fruit…cherries, plums, peaches, nectarines…and since I seem to have a surplus of peaches, peaches it was! I loved this dessert…but, Bill, well…he wasn’t a fan. Lacking in chocolate, I suppose. But I plan to have another slice for breakfast!

Peach Clafouti
Adapted from Martha Stewart
  • ½ cup sugar
  • ½ cup milk
  • ½ cup heavy cream
  • 3 eggs
  • 1 teaspoon vanilla
  • pinch of salt
  • ⅔ cup flour
  • 3 cups peeled and sliced peaches
  1. Preheat oven to 350ยบ. Grease a 9 inch pie plate or ceramic tart dish with butter and use about 1 tablespoon of sugar to dust the dish.
  2. Mix all ingredients except peaches in a blender on high for about a minute, stopping to scrape down the sides. Pour half the batter on bottom of dish. Arranged sliced fruit over batter. Pour the rest of the batter over peaches.
  3. Bake 45-60 minutes till top puffs and turns golden brown. Dust with powdered sugar to serve.
Yield: 6 servings

    1. Looks delicious. Strange how it appears to make a “crust”.

    2. It’s very much the consistency of a crepe, Lee…the boys didn’t care for it, but I could have eaten a few more slices!

    3. Lizzy, Perfect timing. I will bake this tonight. I have some peaches I need to use but not enough for a pie. Looks great! Dawn

    5. Now I have something else to add to my kitchen toys wish list–a ceramic tart pan. Somehow, my clafloutis don’t look as polished.

    6. Carole,

The tart pan came from Crate and Barrel ๐Ÿ™‚
