Out of This World Apple Dessert
When I told Bill there were some apple pie bars in the fridge, that definitely piqued his interest. I didn’t mention anything about the toffee bits as I know that could be enough to dissuade him from taking that first bite.
My plan worked as he fell hard for this apple dessert, then when our son, Tom, came over on Sunday, he went on and on about how amazing they were again. My knitting group adored them, too. I shared the recipe for these gems before I even left for home. You’ll love these caramel apple pie toffee bars that are an easy way to get the marvelous flavor of apple pie without all the toil and trouble!
Tips for Making These Apple Pie Bars:
- If you don’t want to make a full batch, cut this recipe in half and bake in an 8 x 8-inch pan and bake the crust for only 18 minutes instead of 20.
- Line your pan with non-stick aluminum foil or parchment paper so you can pull the cooled bars out of the pan and onto a cutting board for easy slicing.
- If you want to drizzle yours with caramel, there are a couple of options. I have a microwave caramel sauce on this blog or you can purchase a premium jar of caramel sauce (look for butter and cream as ingredients on the label).
- Use a pastry blender to make the streusel topping or if you don’t mind getting your fingers messy, I find my hands do the job most efficiently!

Caramel Apple Pie Toffee Bars
Dreamy layers of shortbread, apples, toffee bits and streusel!
Ingredients
Crust:
- 1 pound salted butter, at room temperature
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 teaspoons of vanilla
- 4 cups flour
- 1 1/2 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1/2 cup toffee chips (I used Heath brand)
Apple Filling:
- 6 large apples, peeled, cored and quartered and cut into 1/8-inch slices
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 4 tablespoons salted butter
To serve:
- Homemade or storebought caramel sauce
Instructions
Make crust:
Preheat oven to 375 degrees. Line a 9 x 13-inch pan with non-stick foil.
Beat butter, sugars and vanilla until creamy. On low, mix in flour and salt.
Pat ⅔ dough on the bottom and a little up the sides of prepared pan.Chill 20 mins. Bake 20 mins and cool.
Add cinnamon to the remaining dough and ½ cup toffee chips. Mix to combine.
Lower the oven to 350 degrees.
Make Filling:
Make the filling by combining the apples, sugar and cinnamon.
Melt the butter in a deep skillet and cook the apples about 15 minutes until most of the liquid has evaporated. Spread the apples over the crust, leaving a small border.
Dollop the remaining dough on top as a crumb topping.Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

I’d suggest Granny Smith since they hold their shape. I usually use a mixture for the best flavor, but I remember the Golden Delicious getting to mushy! Hope you enjoy!
