  • New Potatoes – 1½-2 pounds, washed if needed.
  • Grated Parmesan Cheese – Use real Parmesano Reggiano, not the green can you find on the grocers’ shelves.
  • Fresh Parsley – Chopped to garnish, especially if serving to company. The green helps give the dish some color.

Recipe Tips

  • Use baby or “new” potatoes. They are small, with thin tender skins. They can be found in various colors, tan/brown, yellow, red and even purple.
  • Use real grated Parmesan, also known as Parmigiano Reggiano. The stuff in the green can on the grocer’s shelves won’t provide the best flavor. Look for real Parmesan in the cheese section of your supermarket.
  • Since roasted potatoes are basically brown, adding some chopped parsley or chives can liven them up, but is totally optional.
  • Gently reheat any leftover garlic parmesan roasted potatoes in the microwave before serving.

Crispy Parmesan Roasted Potatoes Recipe

A tasty side dish with new potatoes roasted with garlic and Parmesan cheese. Adapted from the Indianapolis Star.

Ingredients

  • ½ cup salted butter
  • 1 ½-2 pounds new potatoes, cut in half lengthwise when ready to roast.
  • ½ cup real grated Parmesan cheese
  • 1 ½ teaspoons Italian seasoning, I used Penzey's brand
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Olive Oil
  • Chopped parsley, to garnish, optional

Instructions

  1. Put the butter in a 9 x 13-inch baking dish. Place the pan in the oven while you preheat it to 400°. When the butter is melted remove it from the oven.
  2. Mix together ½ cup of the Parmesan, the Italian seasoning, garlic powder, 1 teaspoon salt and ½ teaspoon freshly ground black pepper. Add it to the melted butter in the pan, mixing to make a paste.
  3. Place potato halves, cut side down, into the pan.
  4. Brush the tops of the potatoes with olive oil and sprinkle with salt, black pepper and the remaining 1 tablespoon of grated Parmesan cheese.
  5. Roast uncovered for 35-40 minutes or until fork tender.
  6. Remove from pan to serving dish and sprinkle with herbs to garnish if desired.
