How to Make

Light and creamy and redolent of ripe berries, this strawberry fool was a simple to make, yet elegant dessert.

  1. Mix diced berries with sugar and allow it to macerate or soften and exude juices.
  2. Add a touch of lemon juice to brighten the flavors.
  3. Next, gently fold the berries into sweetened whipped cream. Easy as can be.
  4. Divide among serving dishes (glass is very pretty), either 4 small or 2 larger dishes. This was a hit with my family; I know it will be with yours!

I’d heard my mother-in-law talk about “fools,” meaning a dessert made of berries mixed into whipped cream, a dessert that dates way back to 16th century England.
Fools were traditionally made with gooseberries. Seemingly easy, the appeal and appropriateness of a no-bake strawberry fool for April Fool’s Day were too great to ignore.

No-Bake Strawberry Fool

This light and creamy berry dessert is perfect for spring! Adapted from Chow.com

Ingredients

  • 6 ounces strawberries, hulled and medium diced
  • 2 tablespoons sugar
  • Pinch of salt
  • 1/2 teaspoon freshly squeezed lemon juice
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Fresh strawberries and mint to garnish, optional

Instructions

  1. Place the diced strawberries, sugar, and salt in a bowl, lightly toss.
  2. Let steep for about 10 minutes, then mash to break up the berries into small bits.
  3. Add the lemon juice, mix and set aside.
  4. Whip the cream until soft peaks form. Add the powdered sugar and vanilla and beat till medium peaks form.
  5. Fold the berries into the whipped cream.
  6. Divide the mixture into serving dishes, then put a dollop of the reserved berries in the center of each dessert. Garnish with fresh berries and mint if desired.
  7. Refrigerate until serving time.

Notes

Use other favorite berries instead of strawberries. May adjust sugar amounts depending on the sweetness of the berries.
