Salmon Rosettes with Cream Cheese and Capers~
Here is kind of a non-recipe, but still a stunning arrangement for any breakfast or brunch. Adding some dill would be another nice touch, but I’ve kept it simple.
Salmon Rosettes with Cream Cheese and Capers…a Skinny Chick original
3 small packages smoked salmon (I used Norwegian)
Whipped cream cheese
2-3 heads endive
Red onion, diced
Capers
Cut strips of salmon and roll into rosettes. Place in center of round serving platter. Surround salmon with leaves of endive…like petals of a sunflower. Using a one teaspoon cookie disher or measuring spoon, scoop out rounds of cream cheese and place on endive leaves. Sprinkle arrangement with diced onion and capers. Serve with bagels or sliced baguettes.

Found your site via spicy foodies YBR… and this is definitely an AWESOME presentation. I think even my mother in law would be impressed!:) I’ll have to tag this for later, because its definitely something I want to try out! I’m trying to incorporate more fish into our diet as well since we gave up other meats.

Usually I prepare the smoked salmon with olive oil and lemon or with sour cream and dill … I love your beautiful recipe 🙂

You aren’t kidding – that is stunning. I would be the one person who would stand there and absolutely ruin your beautiful decoration as I scooped the endive up and ate it. Oh, I just love capers – such a good idea to serve it together with this!
