I am not a huge fan of marshmallows. The kids, yes. The hubby, of course. The dog? One of her favorite treats! But I DO love Rice Krispie Treats…and so do my kids. The plain ol’ back of the cereal box recipe is just fine with me. And not that they’re anything close to healthy, at least the cereal is fortified with vitamins and minerals, so a Rice Krispie Treat is not the worst confection to pack in a lunch box. And while we’re at it, why not make them super special???? Add some caramel sauce, then some chopped candy. Now we’re talkin’…. That first week back to school is stressful for parents and kids, so why not offer something extra special like these Caramel and Rolo Rice Krispie Treats to share the love.

Nick was invited to a friend’s lake house for the weekend, so  I knew I needed to send him with a few goodies as these college boys have voracious appetites. I whipped up a batch of chocolate chip cookies, then eyed the mega box of Rice Krispies I had in the pantry. I had some leftover caramel sauce in the fridge, plus a bag of mini Rolos…I had a plan. Nick came back tired and sun burnt, but did report that these caramelly treats drew much praise from the boys.  They are a wee bit sticky sticky, but one of these bars placed in a baggie or wrapped in Saran would be the perfect lunch box treat. Caramel and Rolo Rice Krispie Treats

Ingredients

  • 3 tablespoons butter
  • 40 large marshmallows
  • 1/4 cup caramel sauce
  • 6 cups Rice Krispie cereal
  • 8 ounce bag mini Rolos, cut in half (chocolate coated caramel candies)

Instructions

  1. Line a 9 x 9 inch pan with non-stick foil (or use regular foil and butter or grease well). Set aside.
  2. Melt marshmallows and butter in microwave safe bowl, starting with 45 seconds, stirring, then heating and stirring at 30 second intervals till marshmallows are melted and smooth. Mix in caramel sauce.
  3. In a large bowl, add cereal and Rolo halves. Toss Rolos so that the sticky cut surface is covered with cereal. Add marshmallow mixture and gently mix till combined.
  4. Pour mixture into prepared pan. With a buttered spatula, press warm mixture till it fills all corners of the pan and is level. Chill before cutting.
  5. To send in a lunch box, wrap each square in plastic wrap. To serve to company, you can drizzle with melted chocolate chips and top with a Rolo candy.
  6. Yield: 9 bars
    Total time:20 minutes without chilling time

  4. Only you can take a simple Rice Krispie Treat and turn it into something fancy and absolutely gorgeous! These bars are wonderful, Liz! And…people always look at me like I’m nuts when I say ‘at least the cereal is fortified,’ but it’s true!! :)

  7. Oh wow these look incredible! Caramel is definitely a weakness of mine. I do monthly behavioral parties for my students and I think this is going on the menu for September! They would love these (and so would their teacher :-))

  9. Rice Krispies from cereal box, Liz? That’s such an amazing job! BTW, what do you do with all the food you baked? You seemed to spend a lot of time in the kitchen making these treats. Time to open up a bakery, or do you already own one?? ^_^

  10. I’ve yet to make my first rice krispies bars, the fact that I have to make my own marshmallows probably the reason why I haven’t yet tried them. Not a big fan of marshmallows either. But with caramel, well well, that’s another story!

  16. Your intro reminded me of the time my parents 90lb poodle ate an entire bag of jumbo marshmallows and a huge Hershey’s bar while we were out to dinner. He likes marshmallows too (and is still alive, the chocolate did not kill him) We came home to a few bits of the marshmallow bag left on the ground and that’s it. I’m thinking he would probably enjoy these rice krispie treats! And so would I. They look great Liz.

  29. OMG did you say Rolo? And caramel? My favourites! No wonder the boys loved these delicious treats. I used to bake a variety of treats coming up to my outlaws’ cottage, but these days everyone is watching the sweets so I’ve had to curb my baking.

He always seems to know when I get into the cupboard where I keep them (along with my other baking supplies) that I’m after them specifically, and not the baking soda – lol!   42. This recipe takes rice krispie treats over the top! Rolos with caramel. Yum! You will laugh at this but I decided the other day to make rice krispie treats here in Hong Kong. You know how we are always spoiled in the States as the instructions are on the back and in English or maybe some other language that you know but it was kind of touch and go for me as I was translating the Chinese characters on how much of each item I need of each item. In the end I ended up consulting the internet. Take Care, BAM

    I must admit, I’ve never had rice krispie treats. Like you, I don’t really care for marshmallows either.

  60. I wouldn’t call them healthy, but in terms of desserts, rice krispies are probably one of the lighter ones. But seriously woman, you just won my heart because rolos and caramel… OMG. I want to lay in these!
