Our June theme for my Twelve Loaves group is Summer Buns. Each month we bake bread to a theme…and “summer buns” became quite a joke around my house. It stared when I polled the family on what they thought constituted a summer bun. My perplexed state tuned to laughter as Bill wondered how I could possibly bake cummerbunds. They were no help at all.
Well, it turns out I was making brioche for Tuesdays with Dorie, so I took half the dough and made a sweet stuffed version of the assigned savory pockets. I combined cream cheese with some sugar and a squeeze of lemon and put a dollop between two dough rounds, along with a big juicy ripe raspberry. The layers puffed up beautifully in the oven! Sweet, glorious raspberry cream cheese brioche pockets were certainly tastier than cummerbunds!
From Scratch or Semi-Homemade for Twelve Loaves
Now, I realize most of you won’t make your own rich and tender brioche, but you could utilize frozen bread dough or even crescent rolls to make something quite similar. Homemade brioche is buttery and an extraordinary treat fresh out of the oven, though, so if you’re a bread baker, you must give these raspberry cream cheese brioche pockets from scratch a shot.
