Peppermint Stuffed Chocolate Chip Bars were part of the tailgating goodies we took to a pregame gathering a couple of weeks ago. We went down to a college football game at the university my youngest attends.

My kids all love York Peppermint Patties…but the only mint that comes near the hubby is toothpaste. So I reminded Bill that these would stay with Nick to share with his friends.

York Peppermint Patty Bars

Being with friends and family was the highlight of the day. The forecast called for spotty showers, but on our drive down to campus, we met with a good steady rain with occasional sleet and temps in the high 30’s. Our first stop on arrival was the IU gift shop for hats and scarves. The sleet returned along with enough thunder and lightning to delay the game…and the agony of being chilled to the bone.

As my fingers grew numb, our friend joked that this was probably one time I wished I weighed 40 pounds more….long underwear and a full length down coat did not cut it! Donned with umbrellas, we all enjoyed sandwiches, a wonderful stromboli recipe (hoping to get the recipe) and loads of sweets, including these chocolate chip bars filled with peppermint patties!

Peppermint Stuffed Chocolate Chip Bars

My bars were slightly overbaked…so a little on the dry side. I like my chocolate chip bars just a wee bit underdone…they are moister and chewier that way. I’ve adjusted the baking time…but just check on them after a half hour as all ovens cook differently. Nick was happy to take all the leftovers back to his dorm…apparently, college boys have lower standards than blogger moms 🙂

Peppermint Stuffed Chocolate Chip Bars…adapted from Sally’s Baking Addiction

3/4 cup butter, at room temperature
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 1/2 teaspoons vanilla
3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda<
1 1/4 cups mini-chocolate chips
11-ounce bag York Peppermint Patties

Preheat oven to 350º. Line a 9 x 9-inch pan with non-stick foil. Set aside.< Cream butter and sugars till light and fluffy. Add eggs and vanilla and mix till combined. Stir in baking soda and salt, then add flour and mix till combined. Carefully mix in chocolate chips. Press half of cookie dough in prepared pan. Top with unwrapped peppermint patties. Cover with the remaining cookie dough and spread with an offset spatula to make top evenand level. Bake 34-38 minutes, till golden. Cool in pan, then place in the refrigerator to chill for cleaner cutting. Makes 16-25 depending on size.
