How to Marbleize Tiger Bark

I don’t go all crazy when I marbleize candies or toppings. Here is the simple technique I use:

  1. Spread the peanut butter layer across a foil-lined half-baking sheet.
  2. Next, pour parallel strips of the chocolate from one long side to the other.
  3. From there, I  took the tip of a table knife and pulled the chocolate from one short side to the other. Voila, a lovely, elegant pattern.

Recipe Tips

  • Use creamy not crunchy peanut butter for smooth bark. 
  • Line your pan with nonstick foil for easy cleanup.
  • To melt your chocolate, chop and place in a microwave-safe bowl. Heat for short increments, stopping to stir before restarting the microwave.
  • Use a Ziploc bag with a corner snipped to pipe the chocolate stripes over the peanut butter layer. You could use a piping bag, but for those that don’t have one on hand, this option is easy and the bag can be tossed when you’re finished.
  • Make sure to swirl the layers before they cool.
  • Store your bark in the refrigerator. It will be easier to cut as it’s firmer when chilled.

Peanut Butter Chocolate Tiger Bark

A super quick and easy peanut butter and chocolate confection!

Ingredients

  • 1 pound white chocolate, chopped (I used Ghirarelli bars)
  • 1 cup creamy peanut butter
  • 5 ounces semi-sweet chocolate, chopped
  • 1 teaspoon vegetable oil

Instructions

  1. Line a half-sheet pan with non-stick foil. Set aside.
  2. In a microwave-safe bowl, melt the white chocolate, stopping and stirring at 30-second intervals until smooth.
  3. Stir peanut butter into the white chocolate until well combined. With an offset spatula, spread onto the prepared sheet pan into about a 9 x 13-inch rectangle.
  4. Add semi-sweet chocolate and oil to a microwave-safe bowl and melt as directed above.
  5. Pour stripes of chocolate over the peanut butter layer, from one long end to the other.  You can go back and even up these stripes if you have leftover chocolate.
  6. Then drag the point of a butter knife or the side of an offset spatula from one short side to the other (perpendicular to your stripes) to marbleize.
  7. Let the bark cool and solidify. Putting it in the refrigerator will speed up the process.
  8. Cut or break into serving-sized pieces. Store in the refrigerator.

Notes

Work quickly so the peanut butter layer does not set until after you add the chocolate and marbleize.
