The  Peach Bellini Cocktail

I fell hard with my first sip of a Peach Bellini Cocktail. Sitting in picturesque Piazza San Marco, we toasted to the beauty of Italy with some dear friends from Indianapolis who also happened to be in Venice. It wasn’t just the magical locale that made them taste so amazing, it was the fresh Italian peach puree mixed with bubbly that won me over.

We nabbed the first table we spotted in the busy tourist destination. A tall, “professional” waiter, as he dubbed himself, took our order as a band played in the background setting the mood. A silver tray with chips and olives arrived along with our beverages. I had a feeling this would cost us a pretty penny—and it did. Bill still jokes about it till this day. We could have gotten 4 steak dinners at home for the price of our afternoon cocktails. But what the heck. We were on a once in a lifetime trip with our family. And I still remember those bellinis.

Champagne Cocktail for New Year’s Eve

With New Year’s Eve just days away, the holiday cookies and Christmas menus are pushed aside and replaced with cocktails and appetizers. We rarely go out, let alone stay up past midnight, but instead, park ourselves in front of the TV watching bowl games and old movies. We can still toast the new year before retiring with a glass of champagne or even a homemade peach bellini. I discovered some fresh frozen sliced peaches at the market, so I decided to whip up a frozen version of  the classic peach bellini in my blender. Some frozen peaches, ice cubes, peach schnapps and a few other ingredients were pureed to a sweet slush, then poured into glasses garnished with peach slices or berries. So nice that these champagne cocktails can be made when peach season is months away.

The Tournament of Roses Parade

Many years ago, when I was a junior in college, back when dinosaurs roamed the earth, our football team won the Big 10 championship and was headed to the Rose Bowl. A few of my sorority sisters and I piled into a car and drove a couple thousand miles to Pasadena to cheer on our team. We blasted Kool and the Gang and Luther Vandross on the 8 track and only took brief stops for gas.

We slept through the parade after staying up into the wee hours of the morning with the New Year’s Eve festivities but made it to the game. Now it’s my youngest’s turn. His college football team played  in the Pinstripe Bowl in New York City on the 26th, so he, along with 4 of his friends left on Christmas Day to drive to the east coast. They’re crashing on one of his friends’ homes for SEVEN nights. Yikes. 5 extra 22-year olds hanging out for a week?!! I’d need nerves of steel to survive. I hope they don’t wear out their welcome. But they’ll make wonderful memories.

I doubt those college boys will be sipping on cocktails, beer is more their speed, but here at home, a peach bellini always hits the spot.

Peach Bellini Cocktail Recipe

Prep Time 5 minutes
Total Time 5 minutes
Yield 1 serving


  • 3 ounces DOLE® Fresh Frozen Peach Slices, partially thawed
  • 3/4 ounces peach schnapps
  • 4 ounces (1/2 cup) champagne
  • 1 ounces fresh sour* see link to recipe below
  • 1/2 ounces grenadine syrup
  • 1/2 ounces simple syrup (equal parts sugar and water, cooked till sugar dissolves, then cooled)
  • 3/4 cup ice cubes


  1. Combine peaches, schnapps, champagne, fresh sour, grenadine, simple syrup and ice in blender container. Cover; blend until smooth.
  2. Pour into glass. Garnish with frozen peach or strawberry slice.
