Paris Mushroom Soup…French Fridays with Dorie
I was thrilled to start the new year off with another fabulous recipe from Dorie Greenspan’s latest cookbook, Around My French Table.  French Fridays with Dorie is group of bloggers  who are making the same recipe each week, then posting photos and comments that Friday.  We’ve been asked not to post the recipe…just save up and buy this magnificent cookbook…you won’t regret it.

I adore mushrooms, but I was not certain how I would feel about a mushroom soup that was completely pureed.  But from the first spoonful, I was hooked.  In addition to mushrooms, the onions, garlic, rosemary and white wine infused the broth with lovely, complimentary flavors.  Dorie suggests pouring the piping hot soup over a fresh salad of thinly sliced mushrooms, scallions and chives and topping off with a spoonful of crème fraîche. I used some Greek yogurt for my topping…the cool creaminess was the perfect contrast.  This would be a lovely starter for any meal.

  13. Gorgeous pics! I’m relieved that I have Dorie’s cookbook already or I would be running to Borders to acquire it. I love the umami satisfaction of mushroom soup.

    What is the white mound in the middle of the bowl?

  16. I have never tried mushroom soup before, but I’m sure I would like it…we go through so many mushrooms around my house! I love that you used Greek yogurt to add some creaminess. Isn’t that just wonderful? Thank you for sharing!
