My sister, Maddy, had these sandwiches pinned on Pinterest. She is an artist from Denver and one of her latest realms is jewelry making. She buys vintage jewelry and refashions it into more contemporary, wearable designs.  I hosted a coffee for my friends to see and purchase her works of art. This was a good excuse for us to cook together. This Mozzarella Grilled Cheese with Raspberries and Brown Sugar was our delicious lunch one day.

What’s the Best Cheese for a Grilled Cheese Sandwich?

I have mentioned before that I prefer a more flavorful cheese for a grilled cheese sandwich. My preferences include sharp Cheddar, Swiss, Monterey Jack, Havarti, and Gouda to name a few. Mozzarella typically isn’t on the list. Even though it’s deliciously gooey when melted, the flavor isn’t especially complex.

But when the grilled cheese is beyond bread and cheese, the rules change. Adding jam, rosemary and brown sugar provide the perfect contrast to the mild, creamy, milky taste!

Mozzarella Grilled Cheese with Raspberries and Brown Sugar

A gourmet grilled cheese sandwich featuring fresh mozzarella cheese!

Ingredients

8 1/2-inch slices Italian bread
Olive oil
1/2 cup raspberry jam
2 teaspoons chopped fresh rosemary
8 ounces fresh mozzarella, cut into 8 slices
Kosher salt
2 tablespoons brown sugar

Instructions

Brush both sides of bread slices with olive oil.  Spread raspberry jam on one side of each slice.  Sprinkle rosemary over jam, then top 4 of the slices with two slices of mozzarella.  Season with salt.  Place second slice of bread, jam side down, over mozzarella topped slice.  Sprinkle top with brown sugar.

Heat skillet and grill both sides of sandwich till  bread is golden and cheese is melted.  Put lid over skillet to facilitate melting if needed.
