I just love Magic Cookie Bars! Ooey, gooey and coconutty. But all I need is one or two nibbles and I’ve had my fill…and since the picky family won’t eat these, I have to dream up an occasion to make them. Hmmm…hour road trip with book club? Bingo! And when Get Off Your Butt and Bake’s blog featured a raspberry version from the Kellogg’s website, I had to try that twist on an old favorite. I couldn’t wait to taste test these Magic Raspberry Cookie Bars.
Magic Raspberry Cookie Bars…adapted from a Kellogg’s recipe
2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup butter, melted
1 can (14 ounces) sweetened condensed milk
1 1/4 cup seedless raspberry jam (my jar only had a cup and it was fine)
1 1/3 cups flaked coconut
1 cut chopped pecans or whatever nut you like
Preheat oven to 350º.
Combine graham cracker crumbs, sugar and melted butter. Mix to combine. Press into the bottom of a 9 x 13 inch pan. Refrigerate 10 minutes.
Mix coconut and sweetened condensed milk. Spread on top of graham cracker crust. Spoon jam over top. Sprinkle with nuts.
Bake 25 to 30 minutes or just till golden brown. Cool, cut and serve.
