For this month’s Secret Recipe Club, I was assigned Angie’s blog, Successful Together. Angie has lots of great low cal tips and recipes…so please check out her lovely blog. I selected her Baked Apple Crumble to make…I just adore fruit desserts…and hubby, Bill, is all in favor of any apple pie, crisp or crumble.

I adapted her recipe a bit, making my own apple filling instead of using canned pie filling. Then, at the last minute, I spied some leftover raspberries and blackberries in the fridge…which gave the juices a beautiful color…and added another layer of flavor to these gems.  I had never combined apples with berries, but they married wonderfully.  Luckily, I placed my ramekins on a cookie sheet as my fruit expanded and bubbled over towards the end of the baking time. This is a great idea for a quick dessert when you’re pressed for time. I’ll definitely make these again in the fall.  Thanks, Angie, for the inspiration! 


Individual Apple Berry Crumbles…inspired by Angie of Successful Together

4-5 baking apples, I used Granny Smiths and Golden Delicious

2 tablespoon of butter
3/4 cup sugar
1/2 teaspoon of cinnamon
A couple grates of fresh nutmeg, optional
A couple handfuls of berries, if desired (I used raspberries and blackberries)
Topping:
1/2 cup flour
1/4 cup packed brown sugar
1/4 cup (1/2 stick) butter, at room temperature
Preheat oven to 350º.  Combine butter, apples,and sugar in a saucepan.  Cook over low heat till the apples start to soften.  Add the cinnamon and nutmeg, if using.  When apples are almost cooked through, add berries if using.  Cook for a few minutes, then remove from heat.
Combine the topping ingredients, rubbing butter into the sugar and flour till the butter is well combined.
Spoon the apple mixture and juices into four 8 ounce ramekins. Top with the crumble topping. Place ramekins on a baking sheet, and bake about 30 minutes, till topping turns golden.
