Goat Cheese Mini Puffs
I love making cream puffs and gougères almost as much as I love eating them. I was probably in elementary school when my mom let me beat the eggs into the butter, water and flour mixture with a wooden spoon while making pâte à choux. I felt so grown up!
And later,when the puffs had baked and cooled, she’d have my sisters and I pull the excess pastry out of the shells so she could fill them with something sweet. The eggy middles were our favorite part. So I’m quite undaunted by recipes like these delicious Goat Cheese Mini Puffs.
Savory Pâte à Choux
This week’s French Fridays with Dorie recipe was a twist on her classic cream puffs. They were filled with mixture of equal parts herbed goat cheese and cream cheese plus a wee bit of cream, salt and pepper. My only tweak was to make my puffs slightly larger than she recommended using closer to a tablespoon of batter per puff.
Plus, I always mix the eggs in by hand instead of hauling out the stand mixer. These goat cheese mini puffswould be perfectly appropriate for any upcoming holiday party. They’re elegant and incredibly tasty! Wasn’t the timing excellent???
