Goat Cheese and Strawberry Tartine
Goat Cheese and Strawberry Tartines or Strawberry Toasts are a perfect summer starter! And SO easy!
Made with fresh, sliced, peak of the season berries and a smear of goat cheese, these tartines, AKA open face toasts, will create a lot of attention, then elicit loads of compliments!!
A Summer Tartine Recipe
Today’s French Fridays with Dorie recipe, like last week’s Pistachio Avocado, was simple with minimal ingredients. Toasted baguette slices were smeared with tangy chèvre, or goat cheese, then topped with luscious, ripe strawberries, a grinding of fresh pepper and a few drops of balsamic vinegar. The resulting Goat Cheese and Strawberry Tartines are a perfect nibble for that June dinner party. Or for someone like me, who’s ready to eat dinner at 5 PM despite our 6:30 dinner reservations, an elegant, delicious snack.
What is a Tartine?
I had never heard the word “tartine” till I joined the French Fridays with Dorie group. A tartine is a French open-faced sandwich topped with a rich spread, like this goat cheese or the Nutella which we previously featured. Dorie likes hers with a chilled glass of white wine…and who’s to argue with the expert!
The bread can vary as can the fruit…fresh or dried…cherries or figs…depending on the season. These were scrumptious. And here’s a shocker…even picky ol’ Bill wanted to try a Goat Cheese and Strawberry Tartine after spying a platter of them in the fridge. I’m slowly wearing him down…as there was a time he wouldn’t touch goat cheese. I’m celebrating the wee victories.

Goat Cheese and Strawberry Tartine Recipe
A simple strawberry and goat cheese appetizer
Ingredients
- About a half a Baguette, sliced (about 1/3 inch thick)
- 6 ounces Goat cheese
- 6 large Ripe strawberries (sliced or cut in half)
- Freshly ground black pepper
- Drizzle of Aged balsamic vinegar
Instructions
- Toast baguette slices. Cool, then spread with goat cheese and top with berries. Sprinkle with pepper and balsamic vinegar.

I have tried these with fig and date with a honey drizzle but strawberry sounds divine. I know I would adore these and they look much nicer with such beautiful color!!!! Cant wait to try I just love goat cheese!

This felt like deja vu all over again. 🙂 You’ve seen the Strawberry and Ricotta Bruschetta in Fine Cooking, I’m sure, being that you’re a partner in fandom of the magazine. I like the idea of using goat cheese (or chèvre) over ricotta though. I guess I need to go pick more strawberries.
Bill is shocking you a little lately… I would LOVE to make these tartines when strawberries are sweet again. The fall ones sold now were too tangy to be of any help.
