Easy Breakfast Casserole
This Easy Breakfast Casserole is a yearly holiday entree for brunch at my friend Suzanne’s house. It’s assembled the night before, then baked up the next day, making it perfect for entertaining or weekend guests.
It’s a tasty Bacon and Egg Casserole that combines two brunch favorites along with plenty of cheese and will satisfy even the heartiest appetites!

Ingredient Notes
- Kitchen Staples – Salt, Milk, Large Eggs, Melted Butter (salted is fine)
- White Bread – Remove the crusts and cube. I used Pepperidge Farm brand white bread.
- Shredded Cheddar Cheese – Kraft Triple Cheddar
- Dry Mustard Powder – Adds depth of flavor, not an obvious mustard flavor.
How to Make
Recipe Tips
- Cover with foil or plastic wrap when refrigerating overnight.
- Use cooked sausage instead of bacon if that’s your preference. Make sure to drain it well before adding to the egg mixture.
- You can also add some lightly seasoned, sauteed vegetables if that sounds appealing. I’d recommend chopped red bell pepper, sliced mushrooms, and/or yellow onion.
- If you’d prefer another cheese, Gouda, Fontina or Swiss would also be delicious.
- To make thicker slices make 1½ times the recipe, but you’ll need to increase the baking time (make sure the center is set before removing from the oven).
- Serve with a fruit salad, juice, muffins or cinnamon rolls, coffee and/or tea.

All my recipes call for large eggs unless noted otherwise.
The top should look set, and if you insert a knife in the middle, it should come out clean when you pull it out. You can also check the internal temperature with a meat thermometer. It should read 160° for the eggs to be safe to eat. Note, if you let the casserole rest for 10 minutes or more after you pull it out of the oven, the internal temperature will continue to rise, so it will be OK if it’s slightly under 160°.
Some suggestions are listed below, but besides coffee, tea and/or juice, a fruit salad, muffins or danish, and/or hashed browns would all be delicious accompaniments.

Easy Breakfast Casserole
A make-ahead breakfast or brunch casserole that's perfect for holidays or weekend company.
Ingredients
- 8 slices white bread, crusts removed and cubed. Pepperidge Farm White Bread recommended.
- 1 pound bacon, fried crisp and crumbled or chopped
- ¾ pound shredded Cheddar or Triple Cheddar cheese
- ¼ cup butter, melted
- ½ salt
- ½ teaspoon dried mustard powder
- 6 eggs, large
- 2 cups milk, I used 2%
Instructions
- Grease a large baking dish, I used a 9 x 13-inch pan. Set aside.
- Add the bread, bacon, and cheese to the baking dish and toss together.
- Drizzle with the melted butter.
- Whisk together the eggs, milk, dry mustard, and salt.
- Pour the mixture over the bread cubes, cover with foil or plastic wrap, and refrigerate overnight.
- When you're ready to bake, preheat the oven to 350°.
- Bake uncovered for 45 minutes. Let stand for a few minutes before cutting into squares to serve.
Notes
Use a smaller dish if you want thicker slices. You may need to adjust the baking time.
