Crunchy Ginger Pickled Cucumbers…French Fridays with Dorie

This wins the simplest French Fridays with Dorie recipe ever! Perfect for this busy holiday weekend. An English cucumber was peeled, quartered lengthwise, then cut into chunks and sprinkled with sea salt. After a half hour a mixture of minced ginger, white vinegar, sugar and red pepper flakes were added followed by a a short chilling time.

Simple and tasty…I kept these all to myself. It’s not like I had any competition.The guy I married lumps zucchini and cucumbers together into his dreaded veggie category…along with a long list of others.
