I asked Bill if he liked this Crispy Crackly Apple Almond Tart as he was taking his second crunchy bite….”oh, yeah” was his satisfied response. When I replied that it was a Dorie recipe, his retort was, “She can’t be wrong about everything.” After the recent sauteed endive and pumpkin yeast bread with cranberries assignments, he has been less than impressed with our selections. He’s a meat and potatoes kind of guy.

Crispy Crackly Apple Almond Tart

This apple almond tart starts with 8 layers of filo, each brushed with butter and sprinkled with sugar. A thin layer of almond cream made from almond flour, sugar, and egg and cream topped the delicate crust. Thinly sliced apples were to be fanned in 3 columns…I passed fanning pears 101, but apparently not the apple chapter…so my apples were lined up like regimented soldiers. A beautiful presentation…but I was slightly underwhelmed. Maybe the suggested Gala apples didn’t offer a huge punch of apple flavor? Or that I’m not a huge fan of almond cream? I much prefer a similar easy French apple tart from Ina Garten…using Granny Smith apples over puff pastry. Figures that when hubby loves a recipe, I’m a little ho-hum about it. I took a few slices to a gathering of my girlfriends…they loved it and asked for the fact, every slice disappeared. Shows what I know. I think you may have to make it to decide for yourself.
