Bill has been gone a lot in the past few months. I was knee deep in a volunteer project and he was visiting his parents…I was thrilled to see that this week’s French Fridays with Dorie recipe would make a quick meal…and would also give me my fungus fix. Reading through the details, I nodded in approval…toasted brioche, mushrooms with shallots, rosemary, mint and cream…till I realized the eggs in said recipe were poached. Ugh. My FFwD friends may recall that I’m not a fan of runny egg yolk…but I  do adore scrambled eggs. The hubby would be thrilled if I poached him some eggs, but the mushrooms would be a no-go. I guess I have a bit of pickiness in me, too…it’s just his list is miles long. And mine has only a handful of items.

Both grilled cheese sandwiches and cheesy scrambled eggs are the comfort foods I fancy when I’m cooking for one…and I knew a wee twist in the recipe and I’d have my dinner. A speedy, delicious dinner.  My tweaked Creamy Mushrooms and Eggs hit the spot.

    I also love runny eggs, but like the others, I’ll eat them any way I can get them. The fungus fix looks perfect too. I’m all for that. We need to have breakfast together. 🙂

  16. I love the runny yolk! Mixed with the mushroom sauce it was heavenly…even Bill ate it! I love your scrambled version…looks perfect for someone who doesn’t do runny yolks!

  20. Sounds wonderful to me Lizzie, I used to hate runny eggs too but I’m really beginning to like them, although scrambled eggs would be quite yummy too! Hope all is well with the family.

  23. I know what it’s like when husbands are gone a lot. And I have a husband that loves poached eggs. But I’m with you, scrambled all the way for me!

  24. I sorta like the poached egg idea but had to draw the line on the 3-minute rule and make it 4. Not so runny. I’m with you – love those scrambled eggs. A midwestern thing, I guess. Unfortunately I like my scrambled eggs with catchup rather than creamy mushrooms. Yep, my grandchildren think it’s gross also. Yours looks pretty tasty so I might go rogue (off the Heinz) and try this dish with scrambled rather than poached. I hope the weeks ahead will be a bit calmer and gentle for you and your family.

  26. You are such an adventurous eater… so I was surprised to hear you don’t like a runny yolk. I have my own weird issues when it comes to eggs…I don’t like those icky white bits that hang around the yolk… if I see them when I go to fry a sunny side up egg… I have to pull them out. Weird… I know. :0)

  40. Scrambled eggs are the most comfortable of comfort foods. I hope your ‘wee twist’ gavce you the comfort these days you and family could use. I think the twist was a good idea if you ask me. Why not?

  43. I certainly understand your aversion to runny yolks. I was in my 40’s when I finally fell in love with that yellow liquid gold. Now I can’t eat hard-boiled eggs and my scrambled eggs are usually undercooked. Anyway – I do love the way you made this your own with the scrambled eggs. Mushrooms and eggs are a great combination!   46. Luckily my guys all love poached eggs so I let them enjoy it. I didn’t put it in my post but I actually do not like poached eggs OR mushrooms, which really does make me sound pretty finicky but I eat almost everything else that is not moving. Good for you for scrambling them and enjoying them. This was flexible enough to inspire lots of change ups. My guys had the left over sauce on burgers ~

  49. One of my favorite breakfasts is a veggie omelette full of creamy mushrooms! This sounds so much easier to make! I crave speed these days, second to taste though and this recipe has them both! Happy New Year Liz!
