Bill has been gone a lot in the past few months. I was knee deep in a volunteer project and he was visiting his parents…I was thrilled to see that this week’s French Fridays with Dorie recipe would make a quick meal…and would also give me my fungus fix. Reading through the details, I nodded in approval…toasted brioche, mushrooms with shallots, rosemary, mint and cream…till I realized the eggs in said recipe were poached. Ugh. My FFwD friends may recall that I’m not a fan of runny egg yolk…but I do adore scrambled eggs. The hubby would be thrilled if I poached him some eggs, but the mushrooms would be a no-go. I guess I have a bit of pickiness in me, too…it’s just his list is miles long. And mine has only a handful of items.
Both grilled cheese sandwiches and cheesy scrambled eggs are the comfort foods I fancy when I’m cooking for one…and I knew a wee twist in the recipe and I’d have my dinner. A speedy, delicious dinner. My tweaked Creamy Mushrooms and Eggs hit the spot.
