It only took a glance at the photo in Around My French Table to sell me on this stunning salad. Ruby red grapefruit are one of my favorite winter snacks…the perfect balance of sweet and tart. Segments of this juicy citrus were diced and combined with cucumber, bell pepper, jalapeño, sliced scallions and lump crabmeat. A dressing of olive oil, grapefruit juice, minced mint plus a squeeze of lemon and a shake of Tabasco was light and complementary. It hit a record 80º today…way above the average around here for mid-March…and this amazing salad was cool and utterly refreshing….with the perfect amount of zing from the peppers.
