Chunky Beets and Icy Red Onions~

I was delighted to see a beet salad on the French Fridays with Dorie roster.  Beets were in our garden growing up…and at least once were pickled, canned and relegated to our basement where they didn’t last long.  And I always fill my plate with beets at the salad bar…trying not to remember they were probably dished out of an industrial sized can.  Beets are one of the many foods that no one else in my family shares my love of…so this week’s selection gave me an excuse to make a salad exclusively for me.

I used Dorie’s bonne idee and served my beets on a bed of peppery arugula with a few slices of goat cheese.  Soaking the red onion slices in icy cold water toned down their pungency, and a sprinkle of oregano leaves was a lovely complement to the sweet beets.  Dorie’s vinaigrette was fabulous..with honey, mustard and sherry vinegar as the stars.   3. Hi Lizzy! You have beets in your garden? So envious! I love beets… I don’t mind eating beet salad everyday! I was actually surprised that some people don’t like it. In Japan we don’t have beets, but as soon as I discovered beets, I’ve been a big fan. This looks really delicious!

  5. I made beet juice once and ended up having to drink all of it because none of the boys will touch it! Since that episode I only used beet in bread and bagels…your salad looks wonderful, maybe I should try cooking with it one more time:)

  33. That was a very nice write-up and your salad looks tasty. I guess I was just not in the mood to do anything great with this recipe…it just did not click at the time, but after seeing what you and others have done, I might give it another go…if I can find some fresh beets.

  49. Hi Lizzy! I have a totally tormented relationship with beets, wanting to love them but arrested by their earthy taste (or as a friend of mine says ‘they just taste dirty’)! This is a beautiful use of them (I’ve always said I’d WEAR them in a heartbeat, loving their rich colors). Hope you are well and will have a great 4th!
