I was delighted to see a beet salad on the French Fridays with Dorie roster. Beets were in our garden growing up…and at least once were pickled, canned and relegated to our basement where they didn’t last long. And I always fill my plate with beets at the salad bar…trying not to remember they were probably dished out of an industrial sized can. Beets are one of the many foods that no one else in my family shares my love of…so this week’s selection gave me an excuse to make a salad exclusively for me.
I used Dorie’s bonne idee and served my beets on a bed of peppery arugula with a few slices of goat cheese. Soaking the red onion slices in icy cold water toned down their pungency, and a sprinkle of oregano leaves was a lovely complement to the sweet beets. Dorie’s vinaigrette was fabulous..with honey, mustard and sherry vinegar as the stars. I adored this lovely salad.
