This month marks the one year anniversary of the Chocolate Party!!! When Roxana, who created this dessert loving group, suggested baking our family’s favorite chocolate dessert to celebrate this milestone, I knew I’d have a heck of a time deciding on one recipe. But the hubby and sons are always hounding me to make layer cakes. A chocolate layer cake with chocolate frosting to be specific. This is one we loved.

May Day Chocolate Layer Cake

I received an e-mail from the Cardiac Cath Lab at the hospital where Bill works. They were having their annual themed cake event and wondered if I would send in a cake. I knew I was going to bake this cake for the Chocolate Party, but how was I to transform it into a May, June or September themed cake? Those were obviously the least desirable, leftover months. I inserted a dowel rod into the center and arranged dangling ribbons from the apex for a May pole. A few pink flowers completed the decor. Voila…a May Day themed cake. Bill said there were only crumbs by the time he made his way to have a sample. A good sign. The cake was a winner. Except I probably need to bake up another one for my family! Since Bill left for work before 6 AM, I didn’t get a chance to take a nice photo of my May Day cake…but above are all the “before” photos.

Chocolate Layer Cake

Yield 12 servings

A moist, old fashioned chocolate layer cake with chocolate buttercream frosting

Ingredients

For cake:

  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cup cocoa
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup butter, melted (Land O Lakes® Butter)
  • 1 tablespoon vanilla
  • 1 cup hot coffee (I used one cup boiling water with 2 teaspoons instant coffee)

Buttercream Frosting:

  • 6 tablespoons butter, at room temperature
  • 1/2 cup unsweetened cocoa powder
  • 2 2/3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350º. Butter two 9 inch cake pans, line with parchment rounds and butter top of parchment. Set aside.
  2. With a stand mixer, stir together first six ingredients. Add eggs, buttermilk, butter and vanilla and beat for about 2 minutes on medium speed, scraping sides of bowl at least once. Stir in coffee.
  3. Divide batter between the two pans. Bake for 30-35 minutes or till toothpick inserted in middle comes out clean. Cool for about 10 minutes, then carefully remove cakes from pans to a wire rack to cool completely. Remove parchment.
  4. Frost when cool.

For Buttercream Frosting

  1. Cream butter. Add cocoa and powdered sugar alternately with milk. Beat till it reaches spreading consistency, adding more milk as needed. Mix in vanilla.

Makes 2 cups frosting.
