If you need the quintessential caramel sauce to top your ice cream sundae, look no further.  This Dorie Greenspan concoction is perfect.  Trust me.  I’ve added vanilla, but otherwise it is pure Dorie genius.  You can use this exquisite caramel in Pastry Wrapped Caramel Apples or Brookies with Caramel and Oreos or savor every delicious nuance over plain vanilla ice cream. There is no need for a candy thermometer, just some careful attention. In less than 30 minutes, you can have a  cup of amazing caramel. 

A couple hints:

Though the corn syrup will help prevent re-crystallization, try to avoid getting sugar granules on the sides of the pan.

Do not stir the caramel while bringing it up to temperature. You may swirl the liquid in the pan to avoid overheating one area of its contents.

Once the liquid turns amber, lower the heat immediately and add the cream. If you wait even a few extra seconds, your caramel could burn.

Liquid caramel is VERY hot. Do not taste till it cools a bit.

Caramel Sauce…adapted from Dorie Greenspan’s Around My French Table

1 cup sugar
2 tablespoons water
1 tablespoon light corn syrup
3/4 cup heavy cream, at room temperature
1 tablespoon butter
1 teaspoon vanilla
Put the sugar, water and corn syrup into a medium saucepan.  Cook over medium high heat, swirling the pan, but not stirring until the caramel turns an amber color.
Lower the heat and carefully add cream and butter…standing away from pan to avoid splattering.  When bubbling subsides, stir sauce till smooth.  Add vanilla.  Pour into heatproof jar (I use a Pyrex measuring cup).  Cool to warm or room temperature before serving.

  44. I had caramel the other day – yep, broke my diet royally. Don’t know if you know about this way of making caramel – just boil a can of condensed milk for a couple of hours – watch that the water does not run dry! I think you have to make a hole in the can. In any case, I’ve never done that, but my friend bought some here and I broke down – yikes, it was rich and thick and naughty! Reminds one a bit of Nutella in texture – but a different flavor.

  48. I really need to sit down and go through Dorie’s book more carefully. I’ve seen so many posts lately with her recipes and I’ve had her book for months and in her Friday club but haven’t had the time lately to post anything.

    This caramel sauce sounds wonderful and since I already printed off the recipe a week or so ago for your baked apples in puff pastry I’ll now definitely have to try the two together.
