I didn’t mention anything about the toffee bits as I know that could be enough to dissuade him from taking that first bite. My plan worked as he fell hard for this apple dessert, then when our son, Tom, came over on Sunday, he went on and on about how amazing they were again. My knitting group adored them, too. I shared the recipe for these gems before I even left for home. You’ll love that these apple bar cookies are an easy way to get the marvelous flavor of apple pie without all the toil and trouble!

  • If you don’t want to make a full batch of these apple pie bars, cut this recipe in half and bake in an 8 x 8-inch pan and bake the crust for only 18 minutes instead of 20.
  • Line your pan with non-stick aluminum foil or parchment paper so you can pull the cooled bars out of the pan and onto a cutting board for easy slicing.
  • You can buy toffee bits or buy a few Heath bars to chop and make your own.
  • PRO-Tip: I like using a variety of baking apples for a depth of flavor. Some favorites include Granny Smith, Honeycrisp, Northern Spys, and Golden Delicious.
  • If you want to drizzle yours with caramel, there are a couple of options. I have a microwave caramel sauce on this blog or you can purchase a premium jar of caramel sauce (look for butter and cream as ingredients on the label).
  • PRO-Tip: Drizzle with caramel as you serve each bar. If you drizzle the whole pan, the streusel could get soft.
  • Use a pastry blender to make the streusel topping or if you don’t mind getting your fingers messy, I find my hands do the job quite efficiently! You can pinch together some of the crumbs to make bigger pieces.

Caramel Apple Pie Toffee Bars

Ingredients

Crust:

  • 1 pound salted butter, at room temperature
  • ½ cup brown sugar
  • 2 teaspoons of vanilla
  • 4 cups flour
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon cinnamon
  • ½ cup toffee chips (I used Heath brand)

Apple Filling:

  • 6 large apples, peeled, cored, and quartered and cut into 1/8-inch slices
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • 4 tablespoons salted butter

To serve:

  • Homemade or storebought caramel sauce

Instructions

Make crust:

  1. Preheat oven to 375°. Line a 9 x 13-inch pan with non-stick foil.
  2. Beat butter, sugars, and vanilla until creamy. On low, mix in flour and salt.
  3. Pat ⅔ dough on the bottom and a little up the sides of the prepared pan.
  4. Chill for 20 minutes. Bake for 20 minutes and cool.
  5. Add cinnamon to the remaining dough and ½ cup toffee chips. Mix to combine.
  6. Lower the oven to 350°.

Make Filling:

  1. Make the filling by combining the apples, sugar, and cinnamon.
  2. Melt the butter in a deep skillet and cook the apples for about 15 minutes until most of the liquid has evaporated.
  3. Spread the apples over the crust, leaving a small border.
  4. Dollop the remaining dough on top as a crumb topping, breaking it into bite-sized pieces.
  5. Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.
