I was thrilled to be invited to the holiday party of a fellow food blogger. Don’t you get excited when you know the food will be outstanding? Well, this was one of those parties. Kate focuses her blogging on savory foods, but her dessert array was impressive. There were brownies, those delicious Special K bars, Pirouettes with cheesecake sauce to name a few…but these chewy bars with caramel undertones were to die for. I politely waited 3 days to ask for the recipe…after making 80 dishes for around 170 guests, I can only imagine her exhaustion!
On-Line Bake Sale
Well, fast forward a few weeks and I decided to participate in an on-line bake sale to raise funds for the Leukemia and Lymphoma Society. Besides being a former oncology nurse, my brother-in-law was cured of his leukemia with a stem cell transplant…so this cause is near and dear to my heart. Steph, creator of the blog Bite by Bite, is hosting the bake sale, so please go visit her blog on January 31 and bid on all the delectable goodies from some of my favorite bloggers. If you win, your treats will be shipped directly to your home.
I’m making Kate’s fabulous bars plus some fudgy brownies for this on-line bake sale…I just know you will find them as spectacular as I did!!! The dark brown sugar, butter and vanilla combination will make caramel and toffee lovers swoon. These simple little bars pack pack a decadent wallop of goodness…believe me!!!
Butterscotch Brownies
Rich, buttery bars made with dark brown sugar
Ingredients
- 1/4 cup 1/2 stick butter, melted
- 1 cup dark brown sugar
- 1 egg (unbeaten)
- 1/4 teaspoon salt
- 3/4 cup cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla.
Instructions
- Preheat oven to 350º.
- Pour melted butter into mixing bowl. Add other ingredients and stir till combined. Spread in buttered 8 x 8 inch pan. May double recipe and bake in a 9 x 13 pan.
- Bake 20-25 minutes. Cut immediately.

Every time I see “butterscotch” I blanch. I got sick on something with butterscotch chips as a child and keep thinking I don’t like butterscotch. Then, everytime I see something like this I think, what am I so afraid of. It looks lovely and I may even give it a try. And thanks for the photo of Lambeau. Too cute!
I’m up early and you make me hungry:) I wish I had these to go with my coffee this morning. And what a sweet boy you have there. (that is a male right?) Mine is all snuggled on the couch this early Saturday. Probably wishing I’d make some brownies:)
