Buckwheat Blini with Smoked Salmon
These Buckwheat Blini with Smoked Salmon made an elegant appetizer, but these mini buckwheat pancakes are also a terrific breakfast dish!
I was so excited to try this recipe…I almost always have smoked salmon in the fridge. I love it on grainy bread with a swipe of mustard for a quick lunch. I didn’t know, however, how difficult it would be to find buckwheat flour and salmon roe, so I’m glad I started the hunt early. I made half a batch (FYI, half a large egg = 1 1/2 tablespoons), and a mini version using one tablespoon of batter per blini. Topped with crème fraîche, a smoked salmon rose, and garnished with a feathery sprig of dill and a sprinkling of salmon roe made these a stunning and delectable appetizer. I skipped the burger for dinner and ate 3 of these beauties instead. And Bill ate the leftovers with syrup for breakfast!!!

What lovely smoked salmon roses! We loved ours too, and our leftovers the next morning were perfect for… more creme fraiche and smoked salmon! It was an interesting variation on bagel, cream cheese, and lox!

We were just talking about buckwheat pancakes the other day and my husband said where can we find buckwheat? In our pantry I replied. I need to remember to use it more often and we always have smoked salmon too. What a lovely dish Lizzy.

We enjoyed these as a meal all by themselves as well. Very tasty. Though, not being a huge fan of smoked salmon, I added just a small piece to each blini. I love your presentation, your little salmon flowers are too cute!
