Biscoff Rolo Bars

It’s the second Monday of the month, so time to feature a recipe from Hugs & Cookies XOXO, the blog of my lovely and talented friend, Danielle. Her Biscoff bars were at the top of my list this month. We both have a slight addiction to caramel treats, and a bit of chocolate and cookie butter never hurts, either!

These babies were scrumptious! The Biscoff added a delicious undertone that will have folks wondering about the secret ingredient. And each bite included a gooey chocolate-covered caramel. How could anyone resist??

I could not, so I sent a plate of these decadent Biscoff Rolo Bars home with both my boys and held back a few for sweet tooth emergencies in my freezer. Let me tell you, my stash did not last long. I didn’t even wait for them to defrost before inhaling each one! Thanks, Danielle, for another splendid recipe!

Have You Heard of Biscoff?

When I started blogging Biscoff Cookie Butter Spread was just appearing in the markets. Created by the folks that make those ubiquitous Biscoff cookies you have experienced if you fly Delta. Described at Europe’s Favorite Cookie for gourmet snacking and recipes, I love using them for no-bake pie crusts instead of graham crackers.

But back to the spread. I found it a delicious substitute for peanut butter, like in these Biscoff Blossoms. So I had no trepidation when adding Biscoff spread to these scrumptious cookie bars. It’s so delicious, you might want to just sit with a jar and eat it with a spoon, but I recommend trying it in these Biscoff Bars!

The Recipe: Biscoff Rolo Bars

Decadent Cookie Bars with Biscoff and Rolos. Slightly adapted from Hugs & Cookies XOXO

Prep Time 20 minutes
Cook Time 35 minutes
Total Time 55 minutes
Yield 24 bars


  • 1 cup butter, at room temperature
  • ¾ cup dark brown sugar
  • ¾ cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup Biscoff Spread or Cookie Butter
  • 1 ¾ cup flour
  • ¾ teaspoon baking powder
  • 1/2 teaspoon salt
  • 12 ounce package Rolo Candy, candies cut in half


  1. Preheat oven to 350. Line a 9×13 pan with nonstick foil.
  2. In a mixer, cream butter and both sugars. Add eggs. Add vanilla and Biscoff. Add flour, baking powder and salt. Stir in half of the Rolos. Spread batter into prepared pan. Chop remaining Rolos and press onto the top.
  3. Bake for approximately 35 minutes until lightly golden. Let cool completely before cutting.

  10. It’s the trifecta of deliciousness: chocolate, caramel and Biscoff! I love these, Liz! Anything stuffed with Rolos is a winner in my book. And now I can’t stop thinking about stashing a few of these in the freezer and eating them while still a bit frozen. It’d be the perfect summer treat!
