Berry and Spinach Salad
March is #greenslove month! Please join in the fun by linking up any leafy green recipe from the month of March 2012. Don’t forget to link back to this post, so your readers know to stop by the #greenslove event! The twitter hashtag is #greenslove.
I dug out an old notecard from my mom out of my recipe box for a strawberry and spinach salad. The sweet vinaigrette is marvelous over berries and baby greens…and I added raspberries and dried tart cherries to the original mix. Sliced candied almonds and blue cheese crumbles also crossed my mind as possible ingredients, but I kept it simple.
I hope you will link up a greens recipe this month: spinach, kale, collard or mustard greens, etc….whatever is your favorite will work. It is the month of St. Patrick’s Day…and besides wearing green, I’m certain eating green will bring you the luck of the Irish!
Berry and Spinach Salad…recipe adapted from my aunt Angela
Bag of baby spinach
Sliced strawberries
Raspberries
Dried tart cherries
Sliced green onions
Dressing:
2 teaspoons sesame seeds
1/2 cup sugar
4 teaspoons Worcestershire sauce
1/4 cup white wine or champagne vinegar
4 teaspoons paprika
1/3 cup oil
Arrange greens, berries and onions in serving dish. Make dressing by whisking together first five ingredients. Slowly add oil while whisking constantly. Drizzle dressing over salad or serve on the side.
Serves 4.

This is a beautiful salad – easy and so refreshing! I love the dressing as I’ve never used paprika in a salad dressing before, but it sounds delicious with the Worcestershire and champagne vinegar… Thank you so much for sharing…

This salad looks so refreshing, I can smell the freshness through the photo ๐ Reminds me a salad recipe I made last year, fresh strawberries, spinach, and some toasted walnuts… The dried cherries and sesame seeds sound great too. Will have to give this a try when I can get fresh and seasonal berries. On my “to-make” list!
beautiful berry salad…easy, healthy and delish!

Nothing like a beeeeeeYOUtiful berry salad. LIz, you are a star!
I made your salad a couple days ago and just loved it. I only had strawberries on hand and used some strawberry vinegar I had just made, but kept everything else the same. Absolutely delicious! Sending you lots of #greenslove!
For so long I was afraid to try strawberries, or any fruit in a salad. Now I love it, and love the flavor combinations in this salad! This sounds delicious:-) Happy GreensLove! Hugs, Terra

So refreshing and beautiful! Thank you so much for sharing at Mix it up Monday and I hope you’ll stop back soon ๐
Love this simple berry salad. The colors and berries attract everyone’s appetite!
I make green salads like this during the summer months with different fresh and dried fruits. They are always so refreshing especially when it is hot and I don’t feel like cooking. However, I don’t have a dressing that I can call my go-to dressing. Yours sounds really good and I can’t wait to try it.
This looks great – really summery and light. I love salads at the moment!
A lovely classic salad: spinach and strawberries. But I love your addition of the raspberries and dried tart cherries. Very interesting dressing too, may try this tonight. Beautiful creation for greenslove my friend.
