Apple Coffee Cake

Apple coffee cake is the best fall recipe for breakfast, brunch, or dessert. I hosted a coffee for group of volunteers and baked up a couple treats to accompany the mulled cider, coffee and tea.

This Apple Coffee Cake with a Streusel Topping was a huge hit, filled with chopped apples and warm autumn spices.

Apple Coffee Cake 

There’s nothing better than a sweet tender slice of coffee cake to nibble on while sipping on coffee and visiting with friends. This apple-filled cake, with its streusel topping, was perfect on a crisp autumn morning. Who doesn’t love the aroma of apples, cinnamon and ginger coming from the oven? I’d happily eat this as a snack or even dessert. Consider it a fabulous multi-purpose cake! As a bonus, it’s a breeze to make and is just as tasty the next day!

A Twist on Emeril’s Coffee Cake

I found the inspiration for this apple coffee cake recipe via The Food Network. Emeril’s version had sour cream, which almost always ensures a moist result. The addition of fruit helps immensely, too. I added some ginger to his original recipe and omitted his brown sugar glaze. The results were spectacular. The Recipe: Apple Coffee Cake

A marvelous coffee cake filled with apples and topped with streusel.

Prep Time 20 minutes
Cook Time 40 minutes
Total Time 1 hour
Yield 12 servings

Ingredients

For cake:

  • 1/2 cup of butter
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 2 cups peeled, cored and chopped apples

For topping:

  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons butter, at room temperature

Instructions

  1. Preheat the oven to 350º. Grease a 13 x 9-inch glass baking dish with non-stick cooking spray.
  2. In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs one at a time, beating after the addition of each. In another bowl, whisk together the flour, baking soda, cinnamon, ginger, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading evenly with an offset spatula.
  3. To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle evenly over the cake and bake until lightly browned and set, 35 to 40 minutes. Remove from the oven and let cool a bit before serving.
