Made with fresh, sliced, peak-of-the-season berries and a smear of goat cheese, this Tartine Recipe, AKA open-face toasts, will create a lot of attention, and then elicit loads of compliments!!

  • It’s a simple recipe with minimal ingredients. Toasted baguette slices were smeared with tangy chèvre, or goat cheese, then topped with luscious, ripe strawberries, a grinding of fresh pepper, and a few drops of balsamic vinegar.

Ingredient Notes:

  • Kitchen Staples – Black Pepper (freshly ground is best)
  • Baguette – Sliced about ⅓ inch thick. Only about half is needed.
  • Goat Cheese – Select any favorite variety. I used Chèvre.
  • Ripe Strawberries – About 6 large berries, sliced. They should be red and fragrant.
  • Aged Balsamic Vinegar – I used an 18-year balsamic to drizzle over the berries. It’s sweet with complex flavors.

Recipe Tips

  • To make toasts/crostini/bruschetta, cut a baguette on the diagonal into ½-inch slices.
  • Brush lightly with olive oil and place on a baking sheet.
  • Cook at 400° for about 8-12 minutes or until golden. You can flip if desired, but the heat of the pan should toast the bottoms.
  • Make these when strawberries are sweet and fragrant.
  • Use other berries or fruit if desired. Peaches would be delicious when in season.
  • If you don’t like goat cheese, substitute another spreadable cheese. Brie or even cream cheese would be tasty.
  • The toasts can be made a day or two ahead of time. Just store airtight until needed.

I had never heard the word “tartine” till I joined the French Fridays with Dorie group. A tartine is a French open-faced sandwich topped with a rich spread, like this goat cheese or the Nutella we previously featured. I’ve also made French toasts with smoked salmon and roast beef. Dorie likes hers with a chilled glass of white wine…and who’s to argue with the expert!

The bread can vary as can the fruit…fresh or dried…cherries or figs…depending on the season. These were scrumptious. And here’s a shocker…even picky ol’ Bill wanted to try a Goat Cheese and Strawberry Tartine after spying a platter of them in the fridge. I’m slowly wearing him down as there was a time when he wouldn’t touch goat cheese. I’m celebrating the wee victories.

What’s the Difference Between a Tartine and Bruschetta?

Both tartines and bruschetta are slices of buttered or oiled bread/toast topped with various spreads. Tartines are French and Bruschetta is Italian.

Ingredients

  • About a half a Baguette, sliced (about ⅓ inch thick)
  • 6 ounces Goat cheese
  • 6 large Ripe strawberries (sliced or cut in half)
  • Freshly ground black pepper
  • Drizzle of Aged balsamic vinegar

Instructions

  1. Toast baguette slices.
  2. Cool, then spread with goat cheese and top with berries.
  3. Sprinkle with pepper and drizzle with balsamic vinegar.
