Chips, dips, chili and wings…those are the munchies I think of eating on game day. But there also has to be a sweet nibble or two to balance out all the savory dishes. That’s where these decadent Cookie Dough Billionaire Bars come into play.Whether you’re rooting for the Broncos or Seahawks, you’ll give a cheer when these decadent gems enter the room.


These babies start with a layer of brownies, then caramel and cookie dough, and topped off with some creamy ganache. The sweet tooth trifecta of chocolate, caramel and cookie dough. Sold yet? Cookie Dough Billionaire Bars #SundaySupper

    Brownie Layer:
    • ½ cup butter, melted
    • 1 cup sugar
    • 1 cup unsweetened cocoa powder
    • ¼ teaspoon salt
    • ½ teaspoon vanilla
    • 2 eggs
    • ½ cup flour
    Caramel layer
    • 25 caramels, unwrapped (about 1 cup)
    • 2 tablespoons heavy cream
    Cookie dough layer
    • ½ cup butter, softened
    • ¼ cup sugar
    • ½ cup brown sugar
    • 2 tablespoons heavy cream
    • ½ teaspoon vanilla
    • ¾ cup flour
    • ? teaspoon salt
    • ½ cup mini semi-sweet chocolate chips
    • chocolate glaze
    • 1 cup semi sweet-chocolate chips
    • 2 tablespoons heavy cream
    1. Preheat oven to 325º, line an 8×8 inch pan with non-stick foil or use regular foil and spray with cooking spray.
    2. Prepare the brownie batter. Cream together butter and sugar in a large bowl. Mix in cocoa powder and salt. Add vanilla and eggs and mix until smooth. Mix in flour until incorporated. Spread brownie batter in prepared pan. Bake 15 minutes.
    3. In microwave safe bowl, melt caramels by microwaving for 60 seconds, stirring, then repeating for 30 second intervals till melted and smooth. Pour caramel mixture over brownie layer. Put the pan in the fridge to chill until cookie dough layer is ready.
    4. Prepare cookie dough layer. Cream together butter and sugars until light and fluffy. Mix in vanilla and heavy cream. Add flour and salt and mix until incorporated. Stir in mini chocolate chips. When caramel layer is firm, carefully spread the cookie dough on top.
    5. Prepare chocolate glaze. In a microwave safe bowl combine chocolate chips and heavy cream. Microwave for 60 seconds, then stop and stir. Repeat using 30 second intervals till melted and smooth. Spread chocolate over cookie dough layer. Chill for easier cutting. Serve at room temperature.
    Yield: 16 bars
      Total time: 2 hours

        68. I made these today. Why do you suppose my caramel layer is hard as a rock. Do you think I refrigerated it too long? Even left at room temp we couldn’t eat the caramel layer.

          • Gosh, I had to refrigerate mine to keep the caramel firm enough to cut. Not enough cream or too much caramel are the only thoughts that come to mind…or possibly over microwaving the caramel. It should have softened after coming to room temperature if it was the right consistency. What a bummer!

          • Bonnie, did you use caramels like Kraft or Brach’s? (the kind used for making caramel apples)
