  • This dressing transforms a simple mixture of veggies into a spectacular side salad. Plus it’s terrific on a classic wedge salad.
  • Even my extremely picky hubby has grown extremely fond of this creamy dressing. Pretty exotic compared to his other two favorites, Ranch and French. He’d pick this blue cheese dressing over my homemade vinaigrette. Some things just cannot be explained!

  • Shallot – finely chopped
  • Chives – finely chopped
  • Lemon juice – Always use fresh lemon juice, never bottled
  • Kosher salt – Blue Cheese is often salty to start with only a pinch, taste, and add more if needed.

A classic creamy blue cheese dressing

Ingredients

  • ¾ cup buttermilk
  • ½ cup mayonnaise
  • 1 shallot, finely chopped
  • 1-2 tablespoons chopped chives
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon kosher salt
  • freshly ground black pepper to taste
  • ¼ teaspoon celery salt
  • ½ cup crumbled blue cheese, I like Maytag

Optional Salad:

  • Spinach or greens of choice
  • Grape or teardrop tomatoes, cut in half
  • Sliced cucumbers
  • Chopped red bell pepper
  • 4 slices of bacon, cooked and chopped

Instructions

  1. Whisk together buttermilk, mayonnaise, shallots, chives, lemon juice, salt, pepper, and celery salt.
  2. Stir in the blue cheese, cover, and refrigerate for at least 30 minutes.
  3. Taste for seasonings and whisk in a little more mayo if desired.
