Seriously, this recipe trumps Julia’s boeuf bourguignon as my favorite beef stew! Fabulously delicious. It’s amazing to taste the magic that happens when chunks of beef are simmered in wine for a few hours…the transformation is unbelievable. The garlic, carrots, parsnips, herbs and touch of cognac infuse their marvelous subtleties resulting in a perfect dish.
