Dinnertime conversation was always lively at the Homer’s. With 5 opinionated children, the topics were varied and timely. I loved eating at my best friend’s house, though we were less cerebral than her older siblings and were known to excuse ourselves mid-meal in fits of squirrelly laughter. One night when I was a guest, those same siblings revealed that their mom’s famous taco pie was on the menu since there was company for dinner.

My mom never made taco pie, so this was a treat. Layered with crushed corn chips, taco meat and gooey, melted cheese, this entree somehow seemed exotic to me. Remember this was the Midwest in the 70’s!

Back then we were all addicted to Day-Glo orange nacho cheese corn chips, and they were most likely used in this retro version from my childhood. I felt the need to clean out all the artificial components before feeding this entrée to my family.

A Taco Pie for the New Millennium!

I knew I could recreate and even improve upon this delicious memory using McCormick’s new Skillet Sauces, specifically, the Fire Roasted Garlic Chili variety. The ingredient list on the package is not a mile long or full of multi-syllabic chemicals. Water, tomato puree, spices, vinegar, salt, and garlic are the first six listed. See what I mean?

The hubby thought I hit a home run, and I was delighted to have a winning recipe that was ready in minutes, not hours. And this same McSkillet sauce can be used to make a quick chili dinner by just adding ground beef, beans and tomatoes. Easy peasy.

Easy Retro Skillet Taco Pie

A quick, yummy and easy skillet dinner

Ingredients

  • 1 tablespoon olive oil
  • ½ onion, diced
  • 1 pound ground beef
  • 1 package McCormick Fire Roasted Garlic Chili Skillet Sauce
  • 1 cup slightly crushed tortilla chips
  • 1+ cups shredded cheddar cheese

Instructions

  1. Saute onion in olive oil till slightly softened. Add ground beef and saute till slightly browned, breaking beef into pieces while cooking.
  2. Add skillet sauce and simmer till heated through and bubbly.
  3. Turn off the burner and sprinkle tortilla chips over the beef followed by the cheddar cheese.
  4. Cover the skillet with a lid to melt the cheese. Alternatively, pop the skillet under the broiler for a minute or two till the cheese is bubbly.
