After the 2 day process of making croissants earlier this month, it was nice to have a simple cookie recipe for this week’s Tuesdays with Dorie. Except that this was no ordinary chocolate chip cookie recipe. It had instant coffee in the dough…truly a grown up cookie…unless you’re my hubby. He definitely has a kid’s palate. These also had nice chunks of dried apricots. Guess who won’t eat those either? The same guy who dusts my kitchen with a blanket of red powder every time he makes a pitcher of Cherry Kool-Aid, more popularly known as “CK” in our household. But he has a ton of positive attributes that outweigh his idiosyncratic food habits…so I just tease him about his quirky tastes. Incessantly.
Our hostess, Peggy of Galettista, has the full recipe on her site. Basically a chocolate chip cookie dough…with 2-3 tablespoons of instant coffee whisked into the flour. I elected to add 2, but decreasing the amount to one tablespoon did cross my mind. But since the hubby wouldn’t be eating these, I wanted the full experience. I used Guittard semi-sweet and white chocolate feves or discs, a fabulous premium chocolate, and about a half pound of chopped dried apricots. Even after an overnight chilling of the batter, the cookies spread more than I’d like. But the texture was lovely…moist and chewy…despite being a little flat. And they were buttery…oh, so good and buttery. But I wasn’t certain if I was a fan of the coffee undertones in these. We invited a couple neighbors over for an impromptu glass of wine and dessert. I had baked a caramel apple pie plus I had a couple new cookies, including these, and asked them for their opinions. Steve decided to go for just the pie and a sliver of a Peanut Butter Rice Krispie Bar (recipe to come…they are amazing!), but Shelli gave these her seal approval…and she’s not a coffee drinker. I’m not sure I’d make these again, but I discovered I love the apricot white chocolate combo…so you may see an oatmeal cookie with those additions in the future…but for now, I have a few dozen cookies that I’ll be eating all by myself. Might be time to pull out the stretchy pants…

Is there any caffeine in these? I could use some caffeine right now…
Bravo, Liz. White chocolate combined with apricots in cookie is crazy great! I do have a kid’s palate but maybe I’m more grownup than I thought. (Tee hee.)
The addition of instant coffee is intriguing; I shall simply have to fetch the recipe and give them a go =)
There are so many flavors in these cookies I don’t know what to think. Definitely an adult cookie. Definitely classy with wine.
I am not sure I’d be on-board with the apricots, but I’d be all over the mocha goodness! Did you refrigerate the dough for a few hours? That can help w/spread in an all-butter dough.
I want these. You’re a bad person to share them on G+ so early in the morning because now I want cookies. =) lol
LOL – a special treat just for you. Apricot-white chocolate does sound nice.
Simple and flavorfull cookies,I love coffee on these cookies
You made these cookies look so good! They weren’t the prettiest of cookies so I am very impressed
I liked the recipe, however my kids preferred the straight choc chip versions I cooked up.
Liz, flat or not flat you cookies looks amazing.
I knew I had unsulphured dried apricot in my pantry…somewhere, but just couldn’t find them until…this morning (that’s the trouble when I “clean up”… I cannot find anything afterwards? Does it happens to you, too?)…but then it was too late.
Nevermind, I “toned” my cookies with natural orange aroma, pecan+walnuts, dried cherries, almonds (in 4 different cookies): a winner in our house.
I agree that these flavors are perfect with oats. These were such a hit with my friends and family. And myself! I added just 1 1/2 Tbs of instant coffee, afraid no one would want them, but it turned out to be perfect. These are a keeper for me! Looking forward to those other goodies Liz!
Your cookies look lovely, I like the white chocolate and dried apricots combo!!! the big chunks in your cookies look so yummy!!!!
I enjoy this recipe, the combination of all these ingredients give a unique flavor to these cookies, with some changes I’m sure they will be perfect and maybe a keeper!!!!
Mochalicious!
I dunno — I don’t think those cookies look too flat. They do look really appealing, though. (I should have taken a photo of what that dough looks like when it bakes up really flat.) Apricot + the chocolates: great combo!
Oooh well they look good! I don’t generally like coffee but perhaps I could change my mind
Besides the fact that we don’t use coffee here, I knew the apricots wouldn’t go over here either. So I used cocoa powder and just lots of chocolate. Sounds like your husband would like these over here.
I made changes so I can’t really compare, but your cookies look great!
Be still my heart ! That’s my kind of cookie
I bet those cookies tastes sensational ?! Will check out the recipe
From a fellow TWD participant, your cookies looked like they turned out wonderfully and such beautiful pictures! Glad to bake with you!
My friend Liz.
Very interesting and different combinations of these cokies. I’m not very fond of coffee biscuits, but these seemed delicious about the texture. A happy combination of ingredients and of course very well presented that even made me want to try. kisses
I love all the ingredients separately but the coffee and and apricot combo seem a little odd to me. The cookies look like they have a beautiful texture though. I’m looking forward to the Peanut Butter rice Krispie bars, that sounds like a winner for sure.
I’ve never thought to put apricots with coffee in the same cookie, how interesting!
I can imagine the taste of having chopped dried apricots added into these cookies. Simply irresistible!
Mmm – I could take a few of those off your hands right now – they look delicious and with such interesting flavours! Your neighbours must love you!!!
These devils are calling me to gulp them all at once. Scrumptious!
Absolutely Fabulous
I am craving some now.
I wish I lived next to you. I hope your neighbors know how lucky they are!
Interesting combination. I left the apricots out of mine (I admit I am a little boring with my flavour profiles.
)
Glad you liked them!
They look lovely! Do you think I could tried them without the apricots? My boyfriend doesn’t like them
Have a good day!
Apricots, coffee, 2 typed of chocolates in discs. I am surprised this cookie hold together. I’ll have a whole plate.
Hm. Chocolate and coffee are delicious – and dried apricots. In fact – tell Bill my kids love them. Tease, tease. J xo
These look good! Haha – pull out the stretchy pants – I remember days like that in Canada. You are too funny and I can’t imagine skinny you having a problem. Have a great week, Lizzy!
White chocolates combined with apricots… wow …love to try any version of cookies!
Oh yes… gotta love the stretchy pants! These cookies are a really good reason to pull them out!
My husband would love these, too!
Great minds think alike, Lizzy! You know I’ll enter if you have Penzeys – I was a little disappointed that they wouldn’t co-sponsor with me but I truly love their products.
Remember when we both posted David Lebovitz’s Peach Ice Cream on the same day? LOL
I can’t wait to meet you, either! You were my first Dorista friend. Look how far we’ve come – especially you! xoxo
Hehe, your hubby is too funny. Mine doesn’t complain too much but the things he does I always tease him about them.:) I love coffee in baked goods and these cookies sound so good. Apricots too? Sounds even better.
Thanks for your honest opinion on these cookies, Liz. I think that’s a weird mix (coffee, chocolate and apricots) but who knows? I certainly wouldn’t turn these down. And seriously?! Lucky people who come and visit you get to choose from three desserts?! I want to come to your place and eat the amazing things you whip up!
Coffee in the dough? Oh, I’ll have to try them…They look fantastic!
Your cookies are so pretty!!! And I got a kick out of your post. (I too love to tease my hubbie too)
I look forward to seeing an oatmeal cookie with apricots and white chocolate! Sounds yummy.
These are crazy good and I’ll take a half dozen please!
YUM! i think I must be on a junk food binge… these look mind blowingly good, I haven’t had a coffee cookie for ages and I love white chocolate, sounds like a match made in heaven.
White chocolate and apricots are a perfect marriage in this cookie. They look perfect to me…Why do you think they went flatter? Butter to flour ratio? When I bake here in Hong Kong, I have all kinds of unexpected nuances as we have so much humidity it affects everything. Take care, BAM
Yes, I do think it was the butter to flour ratio. They were melt in your mouth buttery. Maybe substituting some shortening would help.
I am eating my last cookie as i read your blog and I am thinking my next batch of cookies need to be these!
Coffee.
Or apricot and white choc.
I have actually done both those combos on my blog before.
But not all together…
That is an interesting combo and they sure look pretty! I would like to try one (just maybe not a whole batch…lol..but sometimes you just don’t know til you try and commit for the full-deal!)
These sound different with apricots in them. I bet it makes them very moist. Your family must always be smiling with all the yummy treats you make.
The title says all…these cookies must be divine!
Lizzy, one of the advantages of being married is you get to tell husband jokes on your blog
Love these cookies. The addition of dried apricots in a chocolate cookie is quite unusual.
Looks amazing as always! I skipped the fruit. And I agree, after the croissants, this was a breeze.
Your cookies look heavenly
Cheers
CCU
Your cookies turned out perfectly! Mine went rogue, in a delicious kinda way. I’m an espresso drinker so these were made for me, and the apricots worked surprisingly well!
You always make the most delightful looking cookies. One day I will make ones like that I can eat.
I can never have enough of cookies Liz! They would be perfect with my mug of chocolate!
Lit, I really like the fact that you used two different kinds of really good quality chocolate in these delightful cookies – I chilled half of my dough as well overnight to avoid them spreading but did not really think that it made much of a difference (it was just that during some “research” I had read about the ups of chilling chocoalte chip cookie dough for a day before baking) – I loved reading your post, your CK episode makes me smile. Fabulous post, Liz.
Have a great Wednesday!
Yup, you’ve nailed it – these were tasty but a little flat (for me, a little flat in flavour since I didn’t use the espresso powder) – your chocolate chunks look fabulous!
These cookies sound so wonderful…love the mocha flavor! I will be baking them as soon as my husband is done with South Beach…he would love them! I posted my croissants this week instead…finally!
Stretchy pants
I took my batch in to work. Four dozen cookies in the house does not work with my health and fitness goals.
PB Rice Crispy treats – recipe please!!!!!! Can’t wait.
Hmm! Apricot in cookies! I’d love to try the combination with white chocolate! Your lucky neighbors are invited for wine and cookies! What a treat! Nothing like that is happening in my neighborhood!
Liz, these look so delicious I looooove white chocolate
and the combo seems pretty much very tasty. I am a caffeine-a- holic
so these will be my next addiction I believe. Thanks for sharing
I find it so interesting how each member of the challenge evaluates what has been prepared and use different techniques and sometimes ingredients. I love the combination of chocolate and apricots so I think I will be trying this recipe.
Hi, Lizzy! OMG, I don’t know if my Google Reader is acting funny or my Wordpress, but I could’ve sworn I got your updated posts. Your photos look familiar to me, but my schedule’s been so crazy, who knows? Needless to say, I think I’ve worked out the kinks, and any comments I made should be coming from yummychunklet@gmail.com! If not, then I’ll try to see if something’s wrong on my end. =D
Anyway, this post and about five of your previous posts, especially the strawberry cheesecake parfaits, had me in a fit they looked so good! I almost broke my cleanse to make these desserts and croissants! Congrats, Lizzy!
Lizzy,
I love all of flavors in these cookies, even the apricots. I did read that Galliesta added 1/4 c more flour, to help with the spreading of the cookies. I might try doing this , when I make them. I might also try adding a bit of oatmeal. I’m sure that they would still taste awesome.
glaiieesta
Beautiful job, Liz. Lovely photography as always.
Sounds like a fun cookie. Coffee and chocolate usually combine quite well together. Definitely worth trying. That Peanut Butter Rice Krispie Bar sounds like a winner!
Mmmm, these cookies fit the bill for a treat any time of the day. Caffeine? Sounds good to me Liz!
Aren’t cookies the best? So easy and so delicious! Thank you so much for sharing. I have had a long day…and I needed something sweet and chocolatey to cheer me up. I hope you are well. Enjoy the rest of your week. Happy Spring!
Lizzy, it’s been a while since I’ve commented…can’t even click on your blog any more, so I have to type it in each time now! Google+reader list doesn’t let me click on for some reason either!
Your cookies with the white chocolate, the apricot, the coffee…wow! My kind of grown-up cookies. Love it and would eat a few right now with a tall glass of ice cold low-fat milk…yumm!
xoxo
I like the idea of dry apricots in these cookies…great combination of flavors…and they sure look awesome, and perfect with my cup of tea Liz.
Hope you are having a great week
Your cookies look beautiful, Lizzy. So sorry you didn’t like them. Those peanut butter rice krispies sound pretty good to me.
Oh, addition of instant coffee is an interesting thing to de here. Your cookies do look great! Please pass me a few!!
I like the addition of coffee to the cookies, it should add a nice kick to it and they look really lovely too
Bring on the adult cookies! Love the apricots – and a have a family of apricot-lovers. On my list for the weekend “sweet.”
–LUSh. I love the colour of these cookies. Sweeet. X
Lovely cookies… I can just see my teeth sinking into this deliciousness.
Lizzy,
I always thought incessant teasing was an integral part of every marriage. Also, the cookies look delicious.
Annamaria
Your cookies look plump compared to mine! I really enjoyed these cookies, though I wish the coffee flavor was more pronounced. Looking forward to your post on the pb rice krispie recipe.
