Mocha Chocolate Chunk Cookies…#TuesdayswithDorie

After the 2 day process of making croissants earlier this month, it was nice to have a simple cookie recipe for this week’s Tuesdays with Dorie. Except that this was no ordinary chocolate chip cookie recipe. It had instant coffee in the dough…truly a grown up cookie…unless you’re my hubby. He definitely has a kid’s palate. These also had nice chunks of dried apricots. Guess who won’t eat those either? The same guy who dusts my kitchen with a blanket of red powder every time he makes a pitcher of Cherry Kool-Aid, more popularly known as “CK” in our household. But he has a ton of positive attributes that outweigh his idiosyncratic food habits…so I just tease him about his quirky tastes. Incessantly.

Our hostess, Peggy of Galettista, has the full recipe on her site. Basically a chocolate chip cookie dough…with 2-3 tablespoons of instant coffee whisked into the flour. I elected to add 2, but decreasing the amount to one tablespoon did cross my mind. But since the hubby wouldn’t be eating these, I wanted the full experience. I used  Guittard semi-sweet and white chocolate feves or discs, a fabulous premium chocolate, and about a half pound of chopped dried apricots. Even after an overnight chilling of the batter, the cookies spread more than I’d like. But the texture was lovely…moist and chewy…despite being a little flat. And they were buttery…oh, so good and buttery. But I wasn’t certain if I was a fan of the coffee undertones in these. We invited a couple neighbors over for an impromptu glass of wine and dessert. I had baked a caramel apple pie plus I had a couple new cookies, including these, and asked them for their opinions. Steve decided to go for just the pie and a sliver of a Peanut Butter Rice Krispie Bar (recipe to come…they are amazing!), but Shelli gave these her seal approval…and she’s not a coffee drinker. I’m not sure I’d make these again, but I discovered I love the apricot white chocolate combo…so you may see an oatmeal cookie with those additions in the future…but for now, I have a few dozen cookies that I’ll be eating all by myself. Might be time to pull out the stretchy pants…

Bravo, Liz. White chocolate combined with apricots in cookie is crazy great! I do have a kid’s palate but maybe I’m more grownup than I thought. (Tee hee.)

The addition of instant coffee is intriguing; I shall simply have to fetch the recipe and give them a go =)

I am not sure I’d be on-board with the apricots, but I’d be all over the mocha goodness! Did you refrigerate the dough for a few hours? That can help w/spread in an all-butter dough.

I want these. You’re a bad person to share them on G+ so early in the morning because now I want cookies. =) lol

You made these cookies look so good! They weren’t the prettiest of cookies so I am very impressed :)
I liked the recipe, however my kids preferred the straight choc chip versions I cooked up.

Liz, flat or not flat you cookies looks amazing.
I knew I had unsulphured dried apricot in my pantry…somewhere, but just couldn’t find them until…this morning (that’s the trouble when I “clean up”… I cannot find anything afterwards? Does it happens to you, too?)…but then it was too late.
Nevermind, I “toned” my cookies with natural orange aroma, pecan+walnuts, dried cherries, almonds (in 4 different cookies): a winner in our house.

I agree that these flavors are perfect with oats. These were such a hit with my friends and family. And myself! I added just 1 1/2 Tbs of instant coffee, afraid no one would want them, but it turned out to be perfect. These are a keeper for me! Looking forward to those other goodies Liz!

Your cookies look lovely, I like the white chocolate and dried apricots combo!!! the big chunks in your cookies look so yummy!!!!
I enjoy this recipe, the combination of all these ingredients give a unique flavor to these cookies, with some changes I’m sure they will be perfect and maybe a keeper!!!!

I dunno — I don’t think those cookies look too flat. They do look really appealing, though. (I should have taken a photo of what that dough looks like when it bakes up really flat.) Apricot + the chocolates: great combo!

Besides the fact that we don’t use coffee here, I knew the apricots wouldn’t go over here either. So I used cocoa powder and just lots of chocolate. Sounds like your husband would like these over here. ;)
I made changes so I can’t really compare, but your cookies look great!

Very interesting and different combinations of these cokies. I’m not very fond of coffee biscuits, but these seemed delicious about the texture. A happy combination of ingredients and of course very well presented that even made ​​me want to try. kisses

I love all the ingredients separately but the coffee and and apricot combo seem a little odd to me. The cookies look like they have a beautiful texture though. I’m looking forward to the Peanut Butter rice Krispie bars, that sounds like a winner for sure.

Thanks for your honest opinion on these cookies, Liz. I think that’s a weird mix (coffee, chocolate and apricots) but who knows? I certainly wouldn’t turn these down. And seriously?! Lucky people who come and visit you get to choose from three desserts?! I want to come to your place and eat the amazing things you whip up!

White chocolate and apricots are a perfect marriage in this cookie. They look perfect to me…Why do you think they went flatter? Butter to flour ratio? When I bake here in Hong Kong, I have all kinds of unexpected nuances as we have so much humidity it affects everything. Take care, BAM

Yes, I do think it was the butter to flour ratio. They were melt in your mouth buttery. Maybe substituting some shortening would help.

I have actually done both those combos on my blog before.
But not all together…

That is an interesting combo and they sure look pretty! I would like to try one (just maybe not a whole batch…lol..but sometimes you just don’t know til you try and commit for the full-deal!)

Your cookies turned out perfectly! Mine went rogue, in a delicious kinda way. I’m an espresso drinker so these were made for me, and the apricots worked surprisingly well!

Lit, I really like the fact that you used two different kinds of really good quality chocolate in these delightful cookies – I chilled half of my dough as well overnight to avoid them spreading but did not really think that it made much of a difference (it was just that during some “research” I had read about the ups of chilling chocoalte chip cookie dough for a day before baking) – I loved reading your post, your CK episode makes me smile. I love all of flavors in these cookies, even the apricots. I did read that Galliesta added 1/4 c more flour, to help with the spreading of the cookies. I might try doing this , when I make them. I might also try adding a bit of oatmeal. I’m sure that they would still taste awesome.
