Brown Butter Cookies with Brookside Chocolate…and a Chocolate Tasting Kit!

My kitchen is full of chocolate…chocolate bars of all varieties, candies, kisses, even some leftover holiday fudge. It doesn’t tempt me in the least. Then I received a care package from Hershey’s with 3 varieties of their new Brookside Dark Chocolates…they’ve paired real fruit juice pieces with smooth, luscious chocolate: Açai with Blueberry, Pomegranate, and Goji with Raspberry. I ate one, then another, and then another. The next morning, I took a some samples to my knitting group…and one friend commented, as she tried all  the flavors, “These will fly off the shelves.” We couldn’t decide on a favorite…they all have a slight essence of fruit without compromising the chocolate flavor.  A few months back, I picked up some dried gogi berries at the market (you know how Dr. Oz is always touting their virtues)…and let me tell you, they’were nothing to write home about. I think I’ve found a new way to enjoy my exotic fruits..and get my fill of antioxidants in a most delicious way!

I wasn’t sure how these chocolates  would survive in the oven, but I just had to try adding them to one of my favorite chocolate chip cookie bases…the key is making the dough with brown butter. That pushes these WAY over the top.  My attempt at baking with these sweet treats worked perfectly…and I even got an email from one of the knitters, who sampled a cookie after her lunch, to let me know how tasty they were. I always like adding a few chocolate pieces to the warm cookies as a garnish…it makes for the prettiest results. I did have to make a few with chocolate disks…even though my youngest,  Nick, liked his taste of this gourmet chocolate, I was pushing the limit expecting him to embrace these in cookies. I’ll have to wait a few years for his palate to mature. So you have TWO ways to enjoy these chocolates…the healthy way…just a few out of the bag OR in cookies…where maybe the guilt won’t be quite as intense knowing you’re getting a good boost of antioxidants!

Brown Butter Cookies with Brookside Chocolate~

Ingredients

  • 14 tablespoons butter, divided
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 2 teaspoons vanilla
  • 1 egg
  • 1 egg yolk
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 3/4 cup flour
  • 1 1/4 cup Brookside Chocolates (may substitute chocolate chips or discs)
  • Extra chocolates for optional garnish

Instructions

  1. Preheat oven to 375º.
  2. Melt 10 tablespoons of butter in a saucepan over medium high heat till melted. Continue cooking for a couple more minutes till butter is golden brown with a nutty fragrance. Watch carefully so it does not burn. Pour into a heatproof bowl and add the remaining 4 tablespoons of butter. Stir till melted.
  3. Add sugars, then vanilla and mix till combined. Stir in egg and egg yolk. Add baking soda, salt and flour and mix till combined. Stir in chocolate.
  4. Scoop out about 2 tablespoons of dough per cookie and roll into a ball. Place dough balls about 2 inches apart on a parchment lined cookie sheet. Bake about 10 minutes or till cookies are golden. Press 2 or 3 chocolate pieces into warm cookies to garnish. Cool on rack.
  5. Makes about 24 cookies.

I enjoy the fact that you garnish your chocolate chip cookies with more chocolate chips! We need to hang out more often! lol

Brown butter is just a magical secret ingredient–love the warm, nutty undertones it gives to everything from pan-basted fish to, well, chocolate chip cookies!

I’ve never used browned butter in anything but I’m definitely going to try this cookie recipe. I’ll be adding the extra chocolate for garnish too – love the idea.

You had me at browned butter!! Those cookies look so good. Browned butter was a staple when I was growing up – it was poured over mashed potatoes, corn, green beans, and especially on pop corn. I have carried on the tradition – nothing is better than butter, especially browned butter!

Even though I am refined sugar-free, chocolate is one thing I will make an exception for if it is very high in cocoa solids. I have even found some sugar-free chocolate which is quite acceptable. I love the look of those lumps of chocolate in your cookies.

I think I’ve seen this when I’ve wandered down the chocolate aisle, Pom and chocolate sound pretty good to me and paired with a browned butter cookie, I really can’t say no.
