Hummus…French Fridays with Dorie~

I would call myself a hummus purist…chickpeas, lemon, tahini, garlic and a bit of salt are whizzed in my food processor a couple times a month…no other seasonings or flavors needed. So garlicky, creamy and healthy, it’s quite simple to whip up your own. My go to recipe is from a dear foodie friend of Lebanese descent…and contains none of the chickpea liquid nor any cumin. Dorie’s version was only slightly different, but I was eager to compare the two. Such a simple recipe; you just dump and blend till it reaches spreadable consistency. I followed Dorie’s recipe to a T, adding the optional 1/4 teaspoon of ground cumin.


It can be served with veggies or pita triangles, or put it in Belgian endive leaves or mini bell peppers for an elegant presentation. I LOVED this version…as you would expect, Dorie had the perfect combination of ingredients…who knew a little cumin made such a nice impact???  If you’re interested in the recipe, it can be found in Dorie Greenspan’s cookbook, Around My French Table.

I got that cumin spice from a friend many years ago, but i didn’t know where to use it. I mighr better try using that spice too in my cuisines:)

I love hummus – I eat it on my sandwich almost daily and it’s a perfect snack with veggies. Can’t wait to try this, the cumin sounds perfect!

I’m not a fan of chickpeas so I can’t say I like Hummus.

Theresa on the other hand loves hummus so maybe I’ll make this for her one day?

cumin is really the best part. i always roast mine at home and then grind it into dust. I love hummus! Could eat it every single day.

This is why I love FFwD! I was just at another blog where the writer was less than impressed with her hummus and it didn’t sound all that good. But over here, its looking pretty awesome! It’s so interesting to hear all the different views on the same dish :)

Beautiful presentation.
I have to admit, I am less of a purist. A little olive oil and usually some capers or olives ends up in mine :-)

Hummus is something I make often. We love it here as a veggie dip and with pita bread! I prefer using rinsed white kidney beans instead of chick peas. My recipe also calls for cumin and corriander. My brother-in-law is of Lebanese decent and has taught us to drizzle extra olive oil on top of the hummus as well – mmmm, so good!

Humus is my favorite too, I always try to make with different spices,next time if you make it again try to add cordamom seed ground/powder or sundried tomato in oil you will like it :) serve with belgium endive leaves sound yummy :)

Hummus is a dangerous thing to have around the house for me. I can easily wade through a massive bowl in no time at all. Still – I suppose there are worse things to eat!

I can never understand why people actually go and buy this stuff though. Seriously, it’s like the cheapest, easiest thing to make at home!

I loooove hummus! I used to make it at my restaurant daily. So many flavors the possibilities are literally endless. I think my favorite is roasted jalapeno or Walnut + Honey, YUM!

we added a good deal of cumin and paprika and i really liked the spices, although I’m still not 100% sold on hummus… :) your presentation always blows me away! :)

Oh, I’m glad you liked the cumin. It’s one of my favorite spices and an absolute must with any middle eastern type dish. I’m also a big hummus fan, especially on vegetables. But it’s a tie as to which one I prefer to dip pita into – hummus or tahini with lots of cumin and extra garlic. Yum!

I am a “purist” as well but I liked the cumin very much… the second time I made it for today’s lunch snack…yesterday’s was all gone! I ate almost all of it by myself!!!

Wow, that’s a recommendation. You are more of a hummus maven that I so I will definitely give this a try as I ease back into my Dorie make-up recipes. As you know, I substituted lima bean dip as a nod to my South American trip but certainly have hummus on the backburner for this week. Loved your presentation as well as your cudos.
