Simple classic flavors comprise this week’s French Fridays with Dorie dish. I’ve made the mini version of this starter…mainly because we’re about to leave on vacation and only have two dinners scheduled at home this week. The recipe called for 6-inch baked pastry rounds to be topped with pesto or olive tapenade and decorated with a spiral of alternating tomatoes and fresh mozzarella or goat cheese…or if you’d rather make mini versions, stack slices of grape tomatoes and bocconcini on 1 1/2 inch rounds. I recently shared a fresh tomato tart, so making one bite appetizers vs larger tarts was an excellent option.
I popped one of each in my mouth right before dinner….mmmmmmm. They’d be a simple, delectable summer appetizer to serve for any occasion.
