Oatmeal and M and M Cookies…for an On-Line Bake Sale and #SundaySupper~

Every once in a while, I get a massive craving for cookie dough (shhhh…don’t tell Bill; he thinks already thinks I’m a bit insane!)…and most often it’s oatmeal cookie dough. Unfortunately for me, only my oldest and I will eat the baked result…and all I wanted was a couple spoonfuls of dough! What’s a girl to do??? 

Well, this week I had a delightful reason to bake up a batch of oatmeal cookies  My friend, Erin, of Dinners, Dishes and Desserts, was hosting an online bake sale to benefit all those displaced from the wildfires in her home state of Colorado. I was happy to bake up a batch to for this worthy cause.  I used my favorite base recipe from Ina Garten and added mini M and M’s just for fun. They were chewy and wonderful…and, in case you were wondering, the dough tasted divine. Please visit Erin’s blog to see how you can bid on my cookies (a fresh batch, of course) or any of the other tasty treats to help the victims of these horrific fires.

Today’s #SundaySupper theme is Kids in the Kitchen and these cookies would be perfect to bake up with your children. Even the youngest can press a few M and M’s in the dough balls before popping a tray in the oven. #SundaySupper is the mission which encourages families to gather, talk, laugh and dine together…especially for a Sunday meal. Look at all the participants who have involved their young ones in meal preparations this week:

Oatmeal M and M Cookies…adapted from Ina Garten

1 stick butter (1/2 cup), at room temperature
1/2 cup  dark brown sugar
1/2 cup sugar
1 egg, at room temperature
1 teaspoon vanilla
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2  cups old-fashioned oatmeal
1 cup mini M and M’s, reserve some to garnish tops

Preheat the oven to 350º.  Line baking sheets with parchment paper.

Cream butter, brown sugar and sugar till thoroughly mixed.  Add eggs, then vanilla and mix well.  Add flour, baking powder, and salt, and mix till all flour is incorporated.  Mix in oatmeal, then M and M’s. Cover and chill dough at least an hour.

Scoop out tablespoons of dough and place on prepared baking sheets, about 2 inches apart. Press a few of the reserved M and M’s into dough balls.  Bake 12-14 minutes.  Cool for a couple minutes on pan, then remove to wire rack to finish cooling.
